<p>Am promis acum cateva saptamani o reteta de humus si iata, ma tin de cuvant. Am vazut ca multi il numesc humus libanez, desi originea lui nu s-a lamurit inca. Oricum, asta nu e asa de important. Ce conteaza este gustul si faptul ca este un fel de mancare versatil. Poate fi folosit ca sos pentru legume, chipsuri si alte rontaieli sau poate fi servit impreuna cu alte delicatese orientale formand o masa consistenta.</p>

<p><strong>Ingrediente:</strong></p>
<p>2 conserve de naut de 400 g (fara zeama au cam 500 g naut ambele)</p>
<p>zeama de la 1 lamaie</p>
<p>4 linguri ulei de masline</p>
<p>2 linguri cu varf pasta de susan (tahini)</p>
<p>2 catei de usturoi</p>
<p>100-150 ml apa (sau zeama din coservele cu naut)</p>
<p>sare si piper dupa gust</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>Strecoara nautul din conserve (pastrand o parte din apa). Poti folosi si naut uscat. In acest caz, prepararea va dura mai mult. Va trebui sa inmoi boabele de naut (ca la fasolea uscata) peste noapte apoi fierbi, strecori si lasi sa se raceasca.</p>

<p>Pune nautul intr-un blender, adauga usturoiul facut pasta sau dat pe razatoarea mica.</p>

<p>Toarna putin din apa, 3-4 linguri si zeama de lamaie. Mixeaza pana se formeaza un piure, mai adauga apa daca este nevoie si blenderul nu face fata.</p>

<p>Condimenteaza cu sare si piper. Mie imi place si cu piper, dar il poti lasa afara din reteta daca nu iti place.</p>

<p>Adauga pasta de susan (pe care o poti pregati si acasa daca nu gasesti la supermarket. Ai nevoie de susan si ulei vegetal sau de masline. Cam 2 linguri de ulei la 200 g de susan. Prajeste intr-o tigaie susanul, doar atat cat sa devina crocant, nu lasa sa se rumeneasca. Gaseste o modalitate sa zdrobesti semintele impreuna cu susanul, fie in mojar, fie cu blenderul, fie in robotul de bucatarie si gata tahini-ul). Mixeaza impreuna cu pasta de susan.</p>

<p>Toarna si uleiul de masline. Pune compozitia pe o farfurie si decoreaza dupa preferinte cu: ulei de masline, boia de ardei dulce sau picanta, seminte de susan, seminte de pin, patrunjel, coriandru&#8230;</p>

<p>Noi mancam humus de obicei cu lipii prajite (le tai felii, le stropesc cu putin ulei de masline si le pun in tava la cuptor cateva minute pana devin crocante) si cu salata de rosii, castreveti si frunze de patrunjel. Combinatia e delicioasa, satioasa si racoritoare.</p>

<p>Vreau sa-ti arat mai jos cum sa faci un sos pesto usor si gustos pe care il vei regasi apoi in multe din retetele mele. Aceasta este reteta clasica. Pe site-ul meu poti sa gasesti si pesto cu nuca daca nu iti plac mugurii de pin.</p>

<p><strong>Ai nevoie de:</strong></p>
<p>Va trebui sa masori ca volum nu ca si gramaj, cu ajutorul unei cani de 250 ml.</p>
<p>1/2 cana de muguri de pin</p>
<p>3 cani de frunze de busuioc</p>
<p>2/3 cana parmezan razuit</p>
<p>2 catei de usturoi</p>
<p>jumate lingurita de sare de mare</p>
<p>piper dupa gust</p>
<p>2-3 linguri zeama de lamaie</p>
<p>1/2 cana ulei de masline</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1.Prajeste mugurii de pin (foarte putin, pana cand incep sa prinda culoare). Taie usturoiul in bucati mari. Spala busuiocul.</p>

<p>2.Pune toate ingredietele, mai putin zeama de lamaie si uleiul si mixeaza in robotul de bucatarie pana cand se maruntesc bine.</p>

<p>3. Adauga zeama de lamaie si uleiul. Cantitatea de ulei variaza in functie de cat de lichid vrei sosul.</p>

<p>Din cantitatile de mai sus iese un borcan de 300 ml.</p>
<p>Daca il pui intr-un borcan inchis ermetic si il tii la frigider se pastreaza pana la 4-6 saptamani.</p>

<p>2-3 linguri smantana</p>
<p>1 legatura de patrunjel</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Stiu ca multi freaca usturoiul cu uleiul, eu nu fac asta, nu am un motiv anume, doar din comoditate <img src='https://rozealb.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> . Eu pun iaurtul cu smantana intr-un bol, le amestec bine.</p>

<p>300 ml ulei de floarea soarelui (sau ulei de masline pentru o varianta si mai sanatoasa)</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pune galbenusul intr-un bol cu mustarul si zeama de lamaie. Amesteca bine cu mixerul, cam 30 de secunde.</p>

<p>2. Amestecand cu mixerul in continuu toarna treptat uleiul asigurandu-te ca inainte de fiecare adaugare s-a incorporat bine uleiul dinainte. Torna pentru inceput de 4 sau 5 ori jumatati de lingurita de ulei si apoi treci la lingurite pline, apoi la linguri.</p>

<p><strong>!!!! Daca maioneza ti se taie</strong> poti face unul din urmatoarele:</p>
<p>Fie scoti 1 lingura din maioneza in alt bol, adaugi putin mustar sau galbenus fiert si amesteci pana se omogenizeaza, apoi adaugi treptat din maioneza taiata.</p>
<p>Fie adaugi 2 linguri de apa si amesteci din nou.</p>
<p>Fie lasi maioneza deoparte jumate de ora pana se ridica uleiul la suprafata, torni uleiul intr-un recipient si amesteci restul pana se leaga apoi refolosesti uleiul care l-ai scurs.</p>
<p>Aruncatul compozitiei chiar n-ar trebui sa fie o optiune <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pune pastele la fiert conform indicatiilor de pe ambalaj.</p>

<p>2. Toarna vinul intr-o tigaie care e pe foc si lasa 5 minute sa fiarba, ca sa se evapore alcoolul. Adauga untul si parmezanul taiat bucati subtiri si lungi.</p>

<p>3. Toaca busuiocul si adauga-l la tigaie. Adauga sosul pesto si amesteca bine. Asezoneaza cu sare si piper.</p>

<p>2. Adauga rosiile taiate bucatele, sare, piper si zeama de lime. Amesteca bine si serveste.</p>

<p>Salata aceasta e foarte buna pe paine prajita, cu tortillas sau cu peste.</p>
<p>Pentru o varianta si mai sanatoasa, poti servi pe post de sos (trebuie doar sa tai mai marunt rosiile) cu  legume crude: morcovi, bote de telina, castraveti sau ardei.</p>

<p>Iata un sos pe care noi, ca familie il adoram, alaturi de cartofi rantaliti si carne de vita. Merge la fel de bine si cu piure si friptura de porc sau chiar chiftele. Sosului acestuia i se mai spune si martas pe aici, prin Ardeal.</p>
<p>Ingrediente:</p>
<p>1 ceapa mare taiata solzi</p>
<p>2 linguri ulei</p>
<p>2 linguri faina</p>
<p>1,5 l buluion (de casa)</p>
<p>2 linguri zahar</p>
<p>1 lingurita sare</p>

<p>Cum procedezi:</p>
<p>1. Caleste ceapa in ulei. Cand devine transparenta, adauga faina si amesteca in continuu timp de 3 minute.</p>

<p>2. Adauga bulionul, sarea si zaharul si fierbe totul amestecand. Dupa ce da 3-4 clocote e gata.</p>

<p>3. Strecoara-l si lasa-l sa se raceasca, se serveste la temperatura camerei sau chiar rece alaturi de o alta garnitura calda sau de friptura fierbinte.</p>
