<p>Se spune ca aceasta tarta este originara din Franta, de la surorile Tatin care aveau un hotel cu restaurant. Le-a iesit tarta asta dintr-o greseala de gatire a merelor pentru placinta cu mere. Clientii restaurantului au apreciat-o foarte tare, astfel incat a devenit o reteta emblema pentru restaurantul surorilor Tatin. Am vazut multe variante si toate sunt foarte simple de facut, aceasta de azi insa este mai simplificata pentru ca nu e nevoie sa faceti caramelul pe foc, se va face singur la cuptor.</p>

<p>6 mere mari (eu am folosit Grany Smith)</p>
<p>200 g zahar</p>
<p>3 linguri de unt</p>
<p>1 ou pentru uns</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pregateste aluatul conform instructiunilor de la linkul de mai sus si pune-l la frigider.</p>

<p>2. Incalzeste cuptorul al 170 grade C.</p>
<p>3. Curata merele de coaja si de cotor. Taie fiecare mar in 16 feliute.</p>

<p>4. Toarna zaharul pe fundul tavii de tarta si aseaza merele inghesuindu-le bine unele in altele. Pune bucatele din cele 3 linguri de unt peste mere.</p>

<p>5. Intinde aluatul si aseaza-l peste mere. Unge-l cu ou batut si da la cuptorul incins la 180 grade C pentru 30 minute.</p>

<p>6. Scoate de la cuptor, lasa sa se &#8216;odihneasca&#8217; 5 minute dupa care rastoarna pe un platou.</p>

<p>7. Serveste simplu ori cu frisca batuta sau cu inghetata de vanilie.</p>

<p>Cand eram eu mica, Clujul avea Oraselul copiilor, nu stiu cati va mai aduceti aminte. Mergeam acolo de obicei duminica, sambata nu era posibil, era program administrativ acasa (curatenie, mancare, baita si apoi telenciclopedia <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ). In oraselul asta ne dadeam cu trenuletul, ne faceam prieteni noi printre copiii pe care ii intalneam acolo si bineinteles, parintii ne cumparau fie vata de zahar, fie mare glazurate. Imi amintesc cu drag de acele vremuri <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>2 mere (eu am folosit Granny Smith pentru ca sunt ferme si mai acrisoare, in plus imi palce si culoarea lor)</p>
<p>200 g zahar (alb sau brun)</p>
<p>2-3 linguri apa</p>
<p>2 bete de lemn</p>
<p>hartie de copt</p>
<p>optional: colorant alimentar (eu am folosit rosu)</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Spala bine merele, sterge-le si infige cate un bat de lemn in ele, eu am folosit betigase chinezesti.</p>

<p>2. Pune zaharul intr-o oala, toarna si apa si aseaza la foc mic.</p>

<p>3. Adauga si colorantul si lasa oala pe foc scuturand-o din cand in cand. Nu amesteca chiar daca vei fi tentata. Zaharul se va topi incet, va deveni lichid, va bolborosi insa printre bulbuci vei observa ca lichidul devine trasparent. In momentul acela iei oala de pe foc.</p>

<p>4. Dai merele prin aceasta glazura si le asezi pe un platou pe care ai asezat hartie de copt. Cu zaharul trebuie sa te misti repede si cu grija. Repede, pentru ca se intareste pe masura ce se raceste si cu grija pentru ca pericolul sa te arzi e mare, caramelul e foarte fierbinte.</p>

<p>1. Daca doresti, poti da merele caramelizate si prin nuca, migdale, alune prajite si tocate marunt.</p>
<p>2. Poti adauga vanilie la zaharul caramelizat.</p>

<p>Compot de mere seara, compot de mere dimineata, compot de mere la amiaz, iar intre suc de la compot de mere. De asta a avut parte sotul meu vreo 2 zile pentru ca nu s-a simtit bine si era unul din alimentele recomandate pe care le suporta. Astfel incat am ajuns sa fac muuulte variante, dar tot cea simpla e cea mai buna.</p>
<p><strong>Ingrediente:</strong></p>
<p>4 mere</p>
<p>1,5 l apa</p>
<p>2-3 felii de lamaie curatata de coaja</p>
<p>8 linguri rase de zahar (daca vrei mai dulce poti adauga mai mult)</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pune zaharul in oala. Toarna apa deasupra si pune la foc mic.</p>

<p>2. Curata merele de coaja si samburi si taie cubulete. Cand apa fierbe, adauga merele si lamaia.</p>

<p>3. Lasa sa fiarba 2-3 minute (daca ai vreun soi de mere mai tari s-ar putea sa fie nevoie de mai mult de 3 minute), merele se vor mai inmuia si dupa ce inchizi focul.</p>

<p>Ieri au venit fetele la o poveste. Rar ajungem sa fim in formatie completa sau macar aproape completa. T. a facut in toamna un bebe care-i mananca toata energia si tot timpul, B. e in tara o data pe an, C. pleaca si ea in state.   Astfel incat, o adunare laolalta e foarte mare lucru, credeti-ma. In consecinta, zi speciala = tort in mintea mea. Nici bine n-am dat drumul gandului ca pe fb Giovana anunta mare concurs mare. Premiul: un tort <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Am sarit rapid la participare. Dupa multa agitatie bineinteles, a castigat altcineva. Noroc ca aveam eu un plan b, nu la fel de sofisticat, nici la fel de aratos, dar foarte gustos: tort rustic cu mere. L-am servit cu frisca si ne-am bucurat de prietenia dintre noi.</p>
<p><strong>Ingrediente:</strong></p>
<p>7-8 mere</p>
<p>zeama de la jumate de lamaie</p>
<p>100 g nuca macinata</p>
<p>100 g gem de caise</p>

<p><strong>Pentru aluat:</strong></p>
<p>200 g zahar</p>
<p>3 oua</p>
<p>120 g faina</p>

<p>1. Curata merele de coaja si cotor. Taie-le in jumatati. Stropeste-le cu zeama de lamaie ca sa nu oxideze.</p>

<p>2. Amesteca nuca macinata cu gemul.</p>

<p>3. Unge bine cu unt o tava rotunda mai adanca. Presara pesmet deasupra.</p>

<p>4. Aseaza merele in tava si pune cate o lingura de gem cu nuca in fiecare jumatate de mar.</p>

<p>5. Pune ouale si zaharul intr-un bol si pune mixerul la lucru. Bate pana cand se dubleaza in volum. Adauga tot mixand si lingurile de apa pe rand. La final adauga faina amestecand de data asta cu o lingura de lemn si cu mare grija sa nu pierzi prea mult din volumul aluatului.</p>

<p>6. Toarna aluatul peste mere si da la cuptorul incins la 180 grade C 40-45 minute.</p>

<p>Am primit mere din gradina parintilor sotului meu, le-am pus in lazi, dar e mai greu sa le pastram peste iarna pentru ca nu avem o pivnita rece. Asa ca am tot cautat solutii sa le pastrez in stare naturala, nu combinate cu zahar cat posibil <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Asa mi-am amintit si de merele uscate ale bunicii mele. Eu am grabit putin procesul de uscare punandu-le in cuptor.</p>
<p>Ai nevoie doar de mere, alege-le pe cele care nu sunt lovite sau stricate.</p>

<p>Spala-le bine si curata-le de casuta de samburi.</p>

<p>Taie-le in felii de 0,5 cm. Aseaza-le pe o tava. Daca vrei poti presara scortisoara sau zahar brun sau din amandoua.</p>

<p><strong>Ingrediente:</strong></p>
<p>1,5 kg mere</p>
<p>1 lingura zeama de lamaie</p>
<p>200 gr. zahar</p>
<p>2 linguri faina alba</p>
<p>jumate de lingurita praf de scortisoara</p>
<p>sfert de lingurita praf de nucsoara</p>
<p>50 gr. merisoare uscate (optional)</p>
<p>&nbsp;</p>
<p><strong>Pentru aluat:</strong></p>
<p>400 gr. faina alba</p>
<p>un varf de cutit de sare</p>
<p>200 gr. unt</p>
<p>10-12 linguri apa rece</p>
<p>cateva lingurite de lapte si eventual 1 lingura de zahar (optional)</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Amesteca intr-un bol sau intr-un mixer de bucatarie faina si sarea. Adauga untul si amesteca pana cand are consistenta pesmetului.</p>

<p>2. Adauga apa cate o lingura pe rand, cat e nevoie sa formezi un aluat moale. Imparte aluatul in doua.</p>

<p>3. Presara blatul de lucru cu faina si intinde unul din aluaturi. Aseaza-l pe o tava de placinta inclusiv pe marginile acesteia.</p>

<p>4. Acum ocupa-te de umplutura. Curata merele de coaja si seminte. Taie-le in cuburi mici si stropeste cu zeama de lamaie. Adauga faina, zaharul si condimentele, amesteca bine.</p>
<p>5. Toarna umplutura peste aluatul din tava si niveleaza.</p>

<p>6. Intinde cea de-a doua foaie de aluat si acopera placinta lipind cele doua aluaturi unul de altul (eu strang aluatul cele doua aluaturi intre degete). Inteapa cu furculita de cateva ori suprafata de aluat pentru a lasa aburii sa iasa. Daca doresti poti unge deasupra cu lapte si presara cu zahar.</p>

<p>7. Da la cuptorul incins la 180 grade 50 de minute.</p>
<p>8. Serveste-o calda sau la temperatura camerei, ideal insotita de o cupa de inghetata de vanilie si o muzica buna pe fundal <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>Daca doresti poti congela placinta, trebuie doar sa o lasi sa se raceasca complet si sa imbraci in folie.</p>

<p>160 g zahar (daca iti plac prajiturile dulci va trebui sa folosesti mai mult zahar)</p>
<p>300 g faina alba</p>
<p><strong>Pentru finisare:</strong></p>
<p>zeama de la 1 lamaie</p>
<p>4-5 linguri zahar pudra</p>
<p>100 g gem de caise</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Curata merele de coaja si de casuta samburilor. Taie in patratele de 2 cm. Razuieste coaja de lamaie si pune-o deoparte. Stoarce lamaia si stropeste merele cu zeama.</p>

<p>5. Tapeteaza tava cu unt si faina (intinde bine untul pe toata suprafata tavii, pune o lingura de faina si scutura tava ca faina sa imbrace bine toate marginile, scapa de excesul de faina).</p>

<p>6. Toarna aluatul in tava, niveleaza si da la cuptorul incins la 200 grade C pentru 30 minute. Dupa cele 30 min scade temperatura la 180 si coace inca 30 minute.</p>

<p>450 gr. mere</p>
<p>400 gr. rubarba</p>
<p>2 linguri de unt</p>
<p>75 gr. zahar</p>
<p>1 lingurita scortisoara</p>
<p>1 lingura cu varf de ghimbir razuit</p>
<p>&nbsp;</p>
<p><strong>Pentru aluatul sfarmicios:</strong></p>
<p>150 gr. unt rece</p>
<p>350 gr. faina alba</p>
<p>60 gr. zahar</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Curata merele si taiele patrate de 2 cm, rubarba taie-o in felii tot asa groase de 2-3 cm. Razuieste ghimbirul.</p>

Unge un vas termorezistent cu unt (eu am folosit un vas teflonat de aceea am pus doar bucatile de unt din loc in loc). Toarna deasupra merele amestecate cu rubarba si cu ghimbirul razuit. Intr-un bol, amesteca zaharul cu scortisoara si presara-l deasupra umpluturii.</p>

<p>4. Adauga zaharul si amesteca. Acum presara peste umplutura. Da la cuptorul incins la 180 grade timp de 45 minute.</p>
