<p>Vine weekendul! Vei avea timp, vei fi relaxat/a si foarte probabil, la un moment dat, vei avea pofta de ceva dulce. Incearca prajitura asta cu ciocolata si ricotta. E bogata in ciocolata, in acelasi timp e moale si pufoasa. Ricotta cu aroma ei specifica se potriveste perfect. Ca sa nu mai zic si ca e foarte simplu de facut. Asa ca&#8230; spor la gatit si pofta buna!</p>
<p>&nbsp;</p>
<p><strong>Ai nevoie de:</strong></p>
<p>100 g unt</p>
<p>125 g zahar</p>
<p>un varf de cutit de sare</p>
<p>200 g ciocolata (continut de cacao: cel putin 40%)</p>
<p>3 oua</p>
<p>80 g faina alba</p>
<p>jumate lingurita praf de copt</p>
<p>1 lingura cacao</p>
<p><em>Amestecul de branza:</em></p>
<p>250 g ricotta</p>
<p>2 galbenusuri</p>
<p>100 g zahar</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C si pregateste-ti o tava mica (eu am folosit una de 28/40cm) acoperind atat fundul cat si marginile cu hartie de copt.</p>
<p>2. Pune untul si ciocolata intr-o tigaie la foc mic. Cand s-au topit ia de pe foc si adauga zaharul si sarea, apoi ouale pe care le-ai batut impreuna in prealabil.</p>

<p>3. Trece prin sita faina, cacaua si praful de copt. Incorporeaza ciocolata si toarna in tigaie.</p>

<p>4. Pune branza, galbenusurile si zaharul intr-un bol si amesteca bine. Pune cate o lingura plina de amestec de branza din loc in loc peste aluatul de ciocolata din tava. Folosind un cutit trage branza prin aluatul de ciocolata, doar cat sa se formeze efectul marmorat. Introdu in cuptorul incins pentru 30-35 minute sau pana cand in mijlocul tavii aluatul a facut coaja dar e inca miscator. Lasa sa se raceasca in tava inainte de a taia felii.</p>

<p>E crocanta la exterior, iar la interior moale si gumoasa. O poti servi cu frisca si fructe sau ciocolata taiata bucati.</p>

<p><strong>Ai nevoie de:</strong></p>
<p>6 albusuri de ou la temperatura camerei</p>
<p>200 g zahar</p>
<p>1 lingurita otet</p>
<p>3 linguri cu varf de cacao</p>
<p>50 g ciocolata taiata bucatele</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>Pune albusurile intr-un bol mare curat si mixeaza-le (sau bate-le cu telul) pana cand formeaza piscuri slabe. Adauga treptat zaharul, cate o lingura odata, batand dupa fiecare adaugare pana incorporezi tot zaharul.</p>
<p>Adauga ciocolata, otetul, cacaua si amesteca cu grija cat sa se incorporeze toate.</p>

<p>Pregateste-ti o tava cu hartie de copt. Ca sa-ti fie mai usor sa formezi forma de tort, iti poti desena cu creionul un cerc pe hartia de copt.</p>
<p>Toarna albusurile, aranjeaza dupa cum iti place si introdu in cuptorul incins la 180 grade Celsius. Dupa 2 minute redu temperatura la 150 de grade. Lasa 1 ora la cuptor. Cand timpul s-a scurs, opreste cuptorul, deschide usa dar lasa pavlova in cuptor sa se raceasca treptat. Ah, si nu-ti fa griji ca va fi crapata, asa trebuie sa fie.</p>

<p>Orneaza cu frisca batuta si bucati de ciocolata sau fructe (capsuni, zmeura, mure, fructul pasiunii, strugurasi, sau din toate cate putin).</p>

<p>Mi-a fost greu sa-i dau un nume acestei prajituri, pentru ca nu e nici Pavlova, nici Piscot. Important e ca e usoara, delicata si mai ales delicioasa. E un desert elegant obtinut cu putin efort si cu doar cateva ingrediente. Se potriveste si in zilele calde de vara si iarna langa semineu. Nu contine faina, ceea ce o face potrivita si  pentru cei care nu consuma gluten. O poti orna cu ce fructe doresti, eu am optat pentru capsuni, zmeura si cateva alune in zahar ars ca sa amintesc de aroma din prajitura.</p>

<p><strong>Ai nevoie de:</strong></p>
<p>6 oua la temperatura camerei</p>

<p>230 g alune de padure</p>
<p>200 g zahar</p>
<p>Pentru ornat:</p>
<p>300 ml frisca</p>
<p>300 g capsuni</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade Celsius. Ai nevoie de o tava rotunda de 23 de cm (cu fund detasabil). Unge bine cu unt si pune pe fundul acesteia o hartie de copt.</p>

<p>2.Prajeste alunele de padure intr-o tigaie pe foc sau in cuptor, cum doresti. Daca te deranjeaza coaja lor, dupa ce le-ai copt, aseaza-le intr-un prosop de bucatarie si freaca-le cu mainile prin prosop. Eu am lasat si cojile. Marunteste prin ce metoda doresti <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> , eu am folosit robotul de bucatarie (am lasat si bucatele mai mari pentru textura).</p>

<p>3. Separa ouale. Pune galbenusurile intr-un bol mare impreuna cu zaharul. Bate cu mixerul 3-5 minute pana cand compozitia se umfla si devine palida.</p>

<p>4. Pune alunele maruntite in aluat si amesteca.</p>

<p>5. Bate albusurile spuma tare. Daca pui un varf de cutit de sare se vor bate mai usor.</p>

<p>6. Pune mai intai o lingura mare de spuma la aluat si amesteca bine. Adauga si restul de spuma, amesteca cu grija pana cand se incorporeaza.</p>

<p>7. Toarna aluatul in tava si coace in cuptorul incins pentru 35-40 minute sau pana cand o scobitoare introdusa in aluat iese curata.</p>

E bine s-o pastrezi in frigider, atat cat va rezista poftei tale si a celorlalti din casa <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>Iata ca revin dupa un concediu absolut minunat si plin de inspiratie. Daca ai ocazia sa vizitezi Croatia, n-o ocoli. Locuri superbe, oameni calzi si primitori, civilizatie, istorie, mancare buna&#8230; eu cred ca am sa ma reintorc cat de curand. Dar sa revenim la reteta pe care ti-o propun azi: placinta cu fructe de padure. Servita langa ceai sau la sfarsitul unei mese copioase e desertul perfect pentru perioada asta a anului. Poti combina tot felul de fructe de padure, in functie de ce gasesti sau ce ai pe acasa, dar nu uita sa ajustezi cantitatea de zahar pentru ca unele sunt mai acre ca altele.</p>

<p>Daca nu ai timp sa faci un aluat, poti cumpara din magazin aluat de foietaj, va functiona la fel de bine si va fi mult mai rapid.<strong><br />
</strong></p>
<p>420 g faina alba</p>
<p>150 g unt moale</p>
<p>jumate de lingurita sare</p>
<p>10 linguri apa rece</p>
<p><strong>Pentru umplutura:</strong></p>
<p>3 cani zmeura</p>
<p>2 cani afine</p>
<p>50 g faina alba</p>
<p>180 g zahar</p>
<p>jumate de lingurita scortisoara (praf)</p>

<p><strong>Cum procedezi:</strong></p>
<p>Incazeste cuptorul la 180 grade celsius.</p>
<p>Pregateste-ti umplutura si pune-o deoparte.</p>
<p>Toarna zaharul, faina si scortisoara intr-un bol. Amesteca.</p>

<p>Pentru aluat, pune faina si sarea intr-un bol. Taie untul bucatele si adauga-l fainii. Strange intre palme amestecul pana cand obtii un amestec faramicios.</p>

<p>Imparte aluatul in doua si intinde doua cercuri potrivit de mari cat sa acopere fundul si marginile tavii in care vei pune placinta.</p>
<p>Aseaza o foaie de aluat pe tava, asigurandu-te ca nu are gauri si ca marginile tavii sunt acoperite de asemenea.</p>

<p>Tranfera umplutura pe care ai pregatit-o mai devreme in tava, uniformizeaza cat poti. Taie cea de-a doua foaie de aluat in fasii subtiri, apoi impleteste fasiile peste umplutura.</p>

<p>Daca doresti, unge fasiile de aluat cu lapte si presara niste zahar deasupra.</p>
<p>Introdu tava in cuptorul incins si coace pentru 30 minute sau pana cand umplutura incepe sa lase zeama, vei vedea ca se vor forma niste bule de zeama, iar aluatul va prinde culoare.</p>

Bineinteles cei facuti dupa reteta aceasta, nu cei prajiti in ulei si care arata mai mult a gogosi. Mie imi plac inveliti in zahar sau cu gem de fructe de padure, dar sunt foarte buni si cu smantanica.</p>

<p><strong>Ingrediente:</strong></p>
<p>Pentru aproximativ 25 de papanasi:</p>
<p>500 g branza grasa de vaci</p>
<p>2 galbenusuri + 1 albus</p>
<p>2 linguri de zahar</p>
<p>3 linguri de faina alba</p>
<p>4 linguri gris</p>
<p>1 lingurita de sare</p>
<p>100 g pesmet</p>
<p>2 linguri ulei de floarea soarelui</p>
<p>apa cu sare pentru fiert</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste o tigaie  si adauga pesmetul turnand desupra si uleiul. Amesteca in continuu pana cand pesmetul se inchide la culoare. Ia de pe foc si pune deoparte.</p>

<p>2. Pune branza de vaci intr-un bol mare. Amesteca impreuna cu ouale, zaharul si sarea.</p>

<p>3. Adauga faina si grisul. Amesteca pana se omogenizeaza toata compozitia si pune-o deoparte pentru jumate de ora. In timpul acesta grisul se va umfla si va intari putin compozitia, astfel iti va fi usor sa modelezi mingiutele.</p>

<p>4. Dupa ce au trecut cele 30 de minute, modeleaza mingi de marimea mingilor de golf. Daca aluatul se lipeste de maini, ti le poti unge cu ulei sau faina sau chiar apa.</p>

<p>5. Pune apa cu sare la fiert, cand aceasta fierbe, da focul la minim si adauga cu grija papanasii. Apoi lasa la fiert pana se ridica la suprafata si mai dau in clocot de cateva ori, in total aproximativ 10 minute.</p>

<p>Desi pare foarte complicat din pricina multor fotografii si a nesfarsitelor ingrediente, e un tort/tarta foarte usor de facut, are doar cateva mici secrete esentiale pe care daca le respecti intocmai vei savura un tort cu fructe absolut decilios si racoritor. Eu am invatat sa-l fac de la mama, ei ii place foarte mult acest tort cu fructe.</p>

<p>3 oua</p>
<p>6 linguri zahar</p>
<p>4 linguri apa calduta</p>
<p>6 linguri faina alba</p>
<p>1 praf de copt</p>
<p>1 lingura de esenta de vanilie (naturala)</p>
<p><strong>Pentru budinca:</strong></p>
<p>jumate pachet pentru budinca de vanilie (eu am folosit de la Dr. Oetker)</p>
<p>250 ml lapte</p>
<p>2 linguri zahar</p>
<p><strong>Pentru gelatina:</strong></p>
<p>1 pachet de Tort-Gelee de la Dr.Oetker</p>
<p>240 ml apa rece</p>
<p>2 linguri rase de zahar</p>
<p><strong>Pentru decorul cu fructe:</strong></p>
<p>Ce fructe doresti tu, feliate cum doresti si dupa imaginatia ta.</p>
<p>Eu am folosit:</p>
<p>1 conserva de ananas feliat</p>
<p>1 kiwi</p>
<p>cateva visine din compot la care le-am scos samburii</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C.</p>
<p>2. Pune galbenusurile si zaharul intr-un bol si amesteca cu mixerul 2 minute la viteza medie. Adauga lingurile de apa pe rand amestecand in continuu.</p>

<p>4. Toarna si vanilia si omogenizeaza compozitita.</p>

<p>5. Bate albusurile spuma tare. Pentru a se bate bine adauga un varf de cutit de sare.</p>

<p>6. Adauga albusurile la compozitia de ou, amestecand cu grija prin invaluire de sus in jos. Nu amesteca decat cat este nevoie ca alubusurile sa fie incorporate, altfel aluatul nu va mai iesi atat de pufos ci se va intari si va fi mai indesat.</p>

<p>5. Unge cu unt o tava de tarta cu diamentrul de 26-28 cm si tapeteaza cu faina.</p>

<p>6. Toarna aluatul in tava si introdu in cuptorul incins pentru 15-20 minute sau pana cand se rumeste usor deasupra si o scobitoare introdusa in aluat iese curata.</p>

<p>7. Scoate blatul din tava si lasa putin sa se raceasca. Insiropeaza blatul cu sucul de la compotul de ananas.</p>

<p>8. Pregateste-ti budinca. Pune praful de budinca, zaharul si putin lapte intr-o oala mica si amesteca bine cu telul pana dispar cocoloasele. Toarna restul de lapte si pune la foc mediu amestecand in continuu pana se ingroasa.Toarna budinca peste aluat si niveleaza.</p>

<p>9. Decoreaza cu fructe cat mai repede, inainte sa se intareasca budinca.</p>

<p>10. Intr-o oala aseaza gelatina, zaharul si apa si amesteca bine. Pune oala pe foc mediu, la inceput lichidul va avea aspectul din poza de mai jos, destul de tulbure. Amesteca pana cand lichidul se limpezeste. Ia de pe foc si lasa sa se raceasca 2 minute apoi toarna peste tortul de fructe, asigurandu-te ca totul este acoperit cu gelatina. Aceasta pas e important deoarece va pastra aspectul proaspat al tartei si in special al fructelor.</p>

<p>Daca iti place ciocolata iti va placea si tarta aceasta. Este cremoasa, densa, extrem de consistenta. Iar servita cu frisca si caspuni este un deliciu.</p>

<p><strong>Ai nevoie de:</strong></p>

<p>300 ml frisca</p>
<p>500 g ciocolata peste 70% cacao</p>
<p>200 ml lapte</p>
<p>2 oua intregi + 1 galbenus</p>
<p>un varf de cutit de sare</p>
<p>3-4 linguri lichior de ciocolata</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C si prepara aluatul. Aseaza aluatul in tava de tarta (de 28 cm diametru) si impunge-l cu furculita, asta il va impiedica sa creasca. Aseaza o folie si ceva greutate (eu folosesc boabe de fasole). Introdu la cuptorul incins pentru 25 minute sau pana se rumeneste putin. Indeparteaza greutatile si folia.</p>

<p>2. Topeste ciocolata intr-un bol deasupra unei oale cu apa care fierbe.</p>

<p>3. Incalzeste laptele si frisca (ai grija sa nu ajunga la punctul de fierbere). Toarna lichidul peste ouale pe care le-ai batut bine, amesteca si strecoara.</p>

<p>4. Adauga amestecul la ciocolata impreuna cu lichiorul si sarea.</p>

<p>5. Toarna in aluat umplutura si da la cuptorul incins pentru 15 minute. Stinge focul si lasa in cuptor cu usa inchisa 40 minute.</p>

<p>Se spune ca aceasta tarta este originara din Franta, de la surorile Tatin care aveau un hotel cu restaurant. Le-a iesit tarta asta dintr-o greseala de gatire a merelor pentru placinta cu mere. Clientii restaurantului au apreciat-o foarte tare, astfel incat a devenit o reteta emblema pentru restaurantul surorilor Tatin. Am vazut multe variante si toate sunt foarte simple de facut, aceasta de azi insa este mai simplificata pentru ca nu e nevoie sa faceti caramelul pe foc, se va face singur la cuptor.</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pregateste aluatul conform instructiunilor de la linkul de mai sus si pune-l la frigider.</p>

<p>2. Incalzeste cuptorul al 170 grade C.</p>
<p>3. Curata merele de coaja si de cotor. Taie fiecare mar in 16 feliute.</p>

<p>4. Toarna zaharul pe fundul tavii de tarta si aseaza merele inghesuindu-le bine unele in altele. Pune bucatele din cele 3 linguri de unt peste mere.</p>

<p>Cand eram eu mica, Clujul avea Oraselul copiilor, nu stiu cati va mai aduceti aminte. Mergeam acolo de obicei duminica, sambata nu era posibil, era program administrativ acasa (curatenie, mancare, baita si apoi telenciclopedia <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ). In oraselul asta ne dadeam cu trenuletul, ne faceam prieteni noi printre copiii pe care ii intalneam acolo si bineinteles, parintii ne cumparau fie vata de zahar, fie mare glazurate. Imi amintesc cu drag de acele vremuri <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>2-3 linguri apa</p>
<p>2 bete de lemn</p>
<p>hartie de copt</p>
<p>optional: colorant alimentar (eu am folosit rosu)</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Spala bine merele, sterge-le si infige cate un bat de lemn in ele, eu am folosit betigase chinezesti.</p>

<p>2. Pune zaharul intr-o oala, toarna si apa si aseaza la foc mic.</p>

<p>3. Adauga si colorantul si lasa oala pe foc scuturand-o din cand in cand. Nu amesteca chiar daca vei fi tentata. Zaharul se va topi incet, va deveni lichid, va bolborosi insa printre bulbuci vei observa ca lichidul devine trasparent. In momentul acela iei oala de pe foc.</p>

<p>4. Dai merele prin aceasta glazura si le asezi pe un platou pe care ai asezat hartie de copt. Cu zaharul trebuie sa te misti repede si cu grija. Repede, pentru ca se intareste pe masura ce se raceste si cu grija pentru ca pericolul sa te arzi e mare, caramelul e foarte fierbinte.</p>
