<p>Stiu ca e &#8216;cool&#8217; sa zici ca nu sarbatoresti ziua indragostitilor, dar pana la urma de ce nu? Daca iubesti si esti iubit, o zi in plus in care sa-ti surprinzi jumatatea e binevenita. Hm&#8230; ce placut sa stai la un pahar de vorba cu o ciocolata calda in mana, cu o muzica buna in fundal&#8230; Ciocolata calda pentru indragostiti e ciocolatoasa, cremoasa, dulce si&#8230; calda (in perioada asta a anului e important si aspectul asta). Mai jos gasesti reteta de baza pe care o poti varia dupa gust cat iti pofteste inima. Spre exemplu, poti adauga o lingura de nutella sau 2 linguri de lichior de ciocolata, sau 1 lingura brandy sau diferite condimente (scortisoara, nucsoara, chilli) sau 1 lingura de cafea instant si lista poate continua inca mult si bine <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Eu am facut reteta de baza, am adaugat marshmallows si am presarat cu cacao si scortisoara.</p>

<p><strong>Ai nevoie de:</strong></p>
<p>250 g ciocolata cu continut ridicat de cacao (min 60%)</p>
<p>600 ml lapte</p>
<p>1 lingura cu varf zahar brun</p>
<p>un varf de cutit sare</p>
<p>2 lingurite amidon de porumb</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Pune zaharul si sarea in laptele pe care l-ai turnat intr-o oala mica pusa pe foc mediu.</p>

<p>2. Rupe ciocolata in bucati. Ia laptele de pe foc si adauga ciocolata, aceasta se va topi. Foloseste un tel pentru a amesteca bine totul.</p>

<p>3. Amesteca amidonul cu putin lapte cald si adauga la ciocolata calda.</p>

<p>4. Daca optezi pentru vreo variatiune acum e momentul s-o introduci.</p>

<p>Aceste briose cu visine si cocos sunt moi la interior si crocante desupra din cauza glazurii de cocos. Combinatia de visine si cocos e grozava. <p><strong>Ai nevoie de:</strong></p>
<p>320 g faina alba</p>
<p>130 g zahar</p>
<p>un varf de cutit de sare</p>
<p>1 praf de copt</p>
<p>70 g unt</p>
<p>2 oua mari</p>
<p>250 ml lapte</p>
<p>380 g visine (scurse si uscate pe servetel)</p>
<p><strong>Pentru glazura crocanta:</strong></p>
<p>2 linguri  cu varf de zahar brun (sau alb)</p>
<p>2  linguri cu varf de faina alba</p>
<p>50 g unt</p>
<p>un pumn plin de fulgi de cocos</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 190 grade C si pregateste-ti o tava de muffins cu 12 cupe. Aseaza paharele de hartie in fiecare cupa.</p>
<p>2. Intr-un bol mai mare amesteca faina, praful de copt, sarea si zaharul.</p>

<p>3. Intr-un alt bol, bate bine ouale, adauga laptele si untul topit si amesteca bine.</p>

<p>4. Torna amestecul de lapte, ou si unt in amestecul uscat si amesteca doar atat cat sa se omogenizeze. Adauga si visinele si amesteca din nou de 2-3 ori nu mai mult.</p>

<p>5. Imparte aluatul in cupele de hartie, asigurandu-te ca fiecare cupa primeste visine.</p>

<p>6. Prepara glazura: pune toate ingredientele pentru glazura intr-un bol si amesteca cu mainile strangand totul intre palme, pana cand se formeaza un aluat foarte faramicios, ca pesmetul.</p>

<p>7. Aseaza glazura peste fiecare briosa.</p>

<p>8. Introdu in cuptorul incins pentru 20 minute sau pana cand devin aurii.</p>

<p>Pentru mine, laptele de pasare inseamna gustul copilariei.</p>
<p><strong>Ai nevoie de:</strong></p>
<p>1,2 l lapte</p>
<p>1 baton de vanilie (sau 2 linguri esenta de vanilie)</p>
<p>150 g + 50 g zahar</p>
<p>8 oua</p>
<p>2 linguri praf de budinca de vanilie (sau 2 linguri amidon alimentar)</p>
<p>un varf de cutit sare</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Torna laptele intr-o oala si pune-l la incalzit pe foc impreuna cu batonul de vanilie taiat in doua pe lungime.</p>

<p>2. Separa albusurile de galbenusuri. Pune cele 150 g zahar si cele 2 linguri de praf de budinca peste galbenusuri si amesteca bine.</p>

<p>3. Adauga un polonic din laptele cald peste oua, amesteca si apoi toarna totul in tigaie. Pune pe foc si amesteca cu ajutorul unui tel. Da focul la minim.</p>

<p>4. Pune sarea peste albusuri si bate-le spuma tare. Adauga treptat si zaharul (cele 50 g). Albusurile mele sunt roz pentru ca am pus putin colorant <img src='https://rozealb.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> .</p>

<p>5. Pune cate o lingura de spuma in laptele din oala. Cu o lingura stropeste si deasupra norisorii de spuma, cu grija insa. Sunt suficiente 1-2 minute si e gata.</p>

<p>Din seria muffins vin si muffinurile cu unt de arahide si banane. O combinatie interesanta, foarte americana <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> , dar buna. Aceasta varianta am preluat-o de la Rachel Allen, mi s-a parut cea mai tentanta. Am modificat-o foarte putin, in sensul ca a ei era cu fulgi de ovaz, iar eu i-am inlocuit cu faina alba, dar daca vrei poti inlocui cateva linguri de faina alba cu fulgi de ovaz si vor fi exact ca muffinurile lui Rachel Allen <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>320 g faina alba</p>
<p>1 plic praf de copt</p>
<p>2 banane</p>
<p>100 g unt de arahide (crocant ar fi de preferat)</p>
<p>75 g zahar</p>
<p>50 g unt</p>
<p>250 ml lapte</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C. Pregateste-ti 12 paharele de hartie pentru briose pe o tava.</p>

<p>2. Sparge ouale intr-un bol mai mare si bate-le putin. Adauga zaharul si mixeaza sau bate cu telul in continuare pana se omogenizeaza bine.</p>

<p>5. Decojeste bananele si fa-le piure (eu le zdrobesc cu furculita pe o farfurie). Adauga-le compozitiei de mai sus.</p>

<p>6. Intr-un alt bol combina faina cu praful de copt apoi toarn-o peste aluat si amesteca cu telul sau cu o lingura doar de cateva ori, cat sa se inglobeze faina. Incearca sa amesteci cat de putin se poate, altfel briosele nu iti vor creste.</p>

<p>Eu am perioade in care am cate o obsesie culinara. Imi aduc aminte de-o iarna in care puteam manca portocale la orice ora si in orice cantitate, sau uneori am chef de salate si o vreme nu imi trebuie altceva. O astfel de perioada am avut si vara trecuta, in concediu, cand tot ce doream erau budinci si pentru ca nu eram intr-o zona in care budincile sa fie la moda (in Italia <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ) am suferit enorm. Am descoperit totusi o chestie care mi-a satisfacut cat de cat pofta si care semana mult cu o budinca pe care o facea mama cand eram mici, mama o facea din cornuri de 1 leu pe pe vremuri, aceasta era facuta din ceva aluat ca niste croissante. Mi-am amintit zilele astea de ea si pentru ca nu mi-au scapat ingredientele de pe ambalaj, am facut o combinatie din ceea ce am mancat eu in Italia cu ce facea mama cand eram mica. E grozava si copiilor cred ca le va placea mult, plus ca e super simplu si rapid de facut.</p>

<p><strong>Ingrediente:</strong></p>
<p>16 mini croissante simple sau cu unt (le poti inlocui cu paine sau cornuri)</p>
<p>300 ml lapte</p>
<p>1 lingura esenta de vanilie</p>
<p>300 ml frisca</p>
<p>4 oua</p>
<p>2 galbenusuri</p>
<p>170 g zahar</p>
<p>optional: 100 g stafide</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 160 grade C. Intr-un bol rupe in bucati croissantele.</p>

<p>2. Pune intr-o oala laptele cu frisca si cu vanilia. Incalzeste dar nu lasa sa fiarba. Ia de pe foc.</p>

<p>3. Bate ouale impreuna cu zaharul cu ajutorul unui tel. Toarna un polonic de lapte cu frisca si amesteca bine cu telul, apoi incet amestecand continuu toarna si restul de lichid. Strecoara.</p>

<p>4. Toarna peste croissante, daca ai optat pentru stafide adauga-le si pe acestea. Amesteca bine si lasa sa se inmoaie 10 minute.</p>

<p>5. Unge o tava de chec cu unt si pe fundul acesteia aseaza hartie de copt. Toarna compozitia in aceasta. Aseaza in cuptorul incins pentru 30 minute. Lasa sa se raceasca si apoi rastoarna si feliaza.</p>

<p>1. Pune laptele sa fiarba impreuna cu margarina si sarea. Cand fierbe adauga faina si amesteca pana se desprinde de pe vas. Lasa sa se raceasca putin si apoi adauga ouale pe rand si un pumn din cascaval ras.</p>

<p>Mi-am cumparat &#8216;Cartea regala de bucate&#8217; a Pricipesei Margareta a Romaniei. Cand am inceput s-o rasfoiesc am apreciat imediat simplitatea ingredientelor. Asa ca m-am decis pe loc. Aceasta va fi o carte de retete care va trece des prin bucataria mea, le voi incerca pe toate mi-am zis. Este putin probabil sa se intample asa, recunosc, dar cel putin am inceput cu ceva, cu sufleul de branza propus in carte de Arhiducele Georg si Arhiducesa Eilika ai Austriei.</p>

<p><strong>Sufleu de branza:</strong></p>
<p><strong>Ingrediente:</strong></p>
<p>100 g faina alba</p>
<p>50 g amidon de porumb</p>
<p>500 ml lapte</p>
<p>60 g unt topit si lasat la racit</p>
<p>200 g cascaval sau svaiter mai uscat</p>
<p>6 oua</p>
<p>sare si piper dupa gust</p>

<p><strong>Mod de preparare:</strong></p>
<p>1. Incalzeste cuptorul la 200 grade C si razuieste cascavalul.</p>

<p>2. Amesteca laptele cu amidonul si pune la foc mic pana aproape de fierbere. Ia de pe foc si asezoneaza cu sare si piper.</p>

<p>3. Intr-o oala, la foc mic, topeste untul si adauga faina toata odata, amestecand energic pana cand untul se incorporeaza. Fierbe in continuare pana ce faina devine aurie.</p>

<p>4. Adauga laptele fiert cu amidon peste sosul de faina. Amesteca bine pana ce faina si laptele devin ca un sos foarte gros.</p>

<p>6. Bate albusurile spuma cu putin sare si incorporeaza-le in compozitia de mai sus, cu o lingura de lemn, amestecand prin rasturnare. Eu pun mai intai o lingura de albus, il incorporez si apoi adaug restul de albus.</p>

<p>7. Compozitia obtinuta trebuie folosita imediat. Unge cu unt s tapeteaza cu faina bolul pentru sufleu. Introdu la cuptorul incalzit  pentru 30-35 de minute. Eu am folosit un bol mare, daca folosesti boluri din alea mici de sufleu, atunci lasa la cuptor 20 de minute.</p>

Baigli e o prajitura care arata ca un cozonac , dar are aluat fraged si umplutura e din belsug. Cel cu mac e preferatul meu si parca dupa cateva zile mi se pare si mai bun.</p>
<p>Mai jos ai reteta, exemplificarea in imagini este de la baigli cu mac, dar se procedeaza la fel ca la cel cu mac, doar umplutura difera <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>1 kg faina alba</p>
<p>250 g margarina nesarata</p>
<p>3 galbenusuri</p>
<p>200 ml smantana</p>
<p>10 linguri zahar (poate chiar 12-15 in functie de cat de dulce doresti sa fie)</p>
<p>jumate lingurita sare</p>
<p>1 plic de drojdie uscata</p>
<p>150 ml lapte caldut</p>
<p><em>Iti ies 4 baigli din cantitatea de mai sus.</em></p>
<p><em>Cantitatile de la umpluturi sunt pentru 4 baigli, daca vrei sa faci 2 cu mac si 2 cu nuca, injumatateste cantitatile.</em></p>

<p><strong>Umplutura de mac:</strong></p>
<p>500 g mac macinat</p>
<p>1 lingura esenta de vanilie (naturala) sau 2 linguri zahar vaniliat</p>
<p>300 ml lapte</p>
<p>250 g zahar</p>
<p>optional: 100 g stafide</p>
<p>optional: coaja de lamaie</p>

<p><strong>Umplutura de nuca:</strong></p>

<p><strong>Pentru uns: </strong>1 galbenus batut cu 2 linguri de apa.</p>

<p>Amesteca macul macinat cu zaharul, vanilia si laptele pe care l-ai incalzit in prealabil. Adauga si coaja de lamaie sau stafidele, daca ai optat pentru ele. Lasa sa stea deoparte 10 minute pana se absoarbe bine laptele.<strong><br />

<p>4. Imparte aluatul in 4. Intinde fiecare foie cat mai subtire. Pune umplutura si formeaza o rulada. Repeta cu fiecare din cele 4 bucati de aluat.</p>

Daca va e pofta, aveti reteta mai jos <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p><strong>Ingrediente:</strong></p>
<p><strong>Pentru caramel:</strong></p>
<p>200 g zahar</p>
<p>40 g apa</p>
<p><strong>Pentru umplutura:</strong></p>
<p>8 oua</p>
<p>1 l lapte</p>
<p>un varf de cutit de sare</p>
<p>180 g zahar</p>
<p>coaja de la 1 lamaie</p>
<p>1 lingura esenta de vanilie</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pune o oala pe foc, cand aceasta s-a incalzit adauga zaharul si apa. Scutura oala, iar cand incepe sa prinda culoare (cam dupa 6 minute) foloseste o lingura de lemn sa amesteci.</p>

Toarna caramelul intr-un vas termorezistent si incearca sa intinzi caramelul (cu foarte mare grija sa nu arzi) si pe marginile vasului.</p>

Pune oala in care a fost caramelul inapoi pe foc, adauga laptele, sarea, zaharul si vanilia. Lasa-le sa dea in clocot.</p>

<p>4. Intre timp intr-un bol mare sparge ouale si razuieste coaja de lamaie (pe langa aroma ia si din gustul puternic de ou al desertului). Amesteca bine cu telul.</p>

<p>5. Toarna peste oua putin din laptele cald, amestecand energic, apoi toarna si restul laptelui incet. Amesteca bine. Strecoara.</p>

Toarna amestecul peste zaharul caramelizat din vasul termorezistent.</p>

Aseaza vasul intr-o tava in care ai pus apa fierbinte.</p>

<p>8. Pune in cuptorul incins la 150 grade C pentru 60 minute.</p>

<p>Note:</p>
<p>1. Daca folosesti vase pentru portii individuale, atunci va trebui sa le  lasi la cuptor mult mai putin, probabil undeva la 30 minute.</p>
<p>2. Daca doresti sa folosesti mai putine oua, poti folosi doar 5-6 oua si inlocuiesti 500 ml de lapte cu frisca lichida sau lapte mult mai gras.</p>
<p>3. Cantitatea de mai sus inseamna vreo 8 portii.</p>
