<p>Cand eram mici, sora mea si cu mine, eram duse de tata pe dealuri, la padure, colindam mult imprejurimile. De multe ori dupa ploaie, adunam bureti, iar mama facea din ei o tocanita absolut delicioasa. Eu de data asta am avut galbiori, am pus si vreo 3  buc de champinion doar pentru ca asa am avut chef, am facut o combinatie si a iesit absolut delicios, de lins pe degete <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Am servit cu mamaliguta si neaparat frunze de patrunjel (bunicul sotului meu spunea ca daca ciupercile sunt otravitoare patrunjelul se ingalbeneste, nu stiu daca e adevarat, dar eu asa &#8216;probez&#8217; ciupercile:))</p>
<p><strong>Ingrediente:</strong></p>
<p>600-800 g  galbiori</p>
<p>2 cepe galbene</p>
<p>4-5 catei de usturoi</p>
<p>2-3 linguri de ulei</p>
<p>1 lingura boia de ardei dulce</p>
<p>sare/piper</p>
<p>400 ml smantana dulce</p>
<p>1 legatura de frunze de patrunjel</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Spala bine ciupercile. Pune-le sa se opareasca 2-3 minute in apa fiarta cu sare. Strecoara, taie-le la ce dimensiune doresti si pune-le deoparte.</p>

<p>2. Curata usturoiul si ceapa. Toaca-le cat mai marunt. Incalzeste uleiul intr-o tigaie, adauga usturoiul si ceapa si caleste pana ceapa devine transparenta. Adauga si boiaua.</p>

<p>3. Toarna ciupercile deasupra si pune din nou la foc. Condimenteaza si lasa la foc mic, sub capac 10 minute.</p>

<p>4. Toarna smantana si patrunjelul tocat marunt. Amesteca bine si serveste cu mamaliguta sau paine.</p>

<p>10 ciuperci mari</p>
<p>o jumatate de vanata mica (curatata de coaja si taiata patratele)</p>
<p>3 linguri nuca (tocata bucatele mai mici)</p>
<p>5 linguri ulei de masline</p>
<p>sare, piper</p>
<p>1 lingura de pesmet</p>
<p>un pumn de patrunjel verde tocat</p>
<p>optional: ardei iute</p>
<p>branza mozzarella pentru rasuit deasupra.</p>

<p>Cum procedezi:</p>
<p>1. Rupe coditele ciupercilor. Aseaza palarioarele de la ciuperci pe o tava. Sareaza-le.</p>

<p>2. Taie marunt coditele ciupercilor. Incalzeste uleiul intr-o tigaie si prajeste bucatelele de vinete 4 minute, adauga coditele de ciuperci (si ardeiul iute tocat daca ai optat pentru a-l folosi) si caleste inca 4 minute. Condimenteaza.</p>

<p>3. Intr-un bol, amesteca nuca, pesmetul, patrunjelul si vinetele cu coditele de ciuperci.</p>

<p>4. Aseaza cate o lingura din aluat pe fiecare ciuperca.</p>

<p>5. Razuieste desupra mozzarella. Da la cuptorul incins la 170 grade C pentru 20 minute.</p>

<p>Daca ciupercile sunt foarte mari, pune mai intai ciupercile cu umplutura pe ele in cuptor pentru 10 minute, apoi razuieste branza deasupra si da la cuptor pentru inca 20 minute.</p>

<p>Ingrediente:</p>
<p>1,5 cana orez cu bob rotund</p>
<p>1 lingura de ulei de masline</p>
<p>3 catei de usturoi</p>
<p>2 morcovi</p>
<p>7-8 ciuperci</p>
<p>800 ml supa de pui (sau 1 l de apa si 2 cuburi de concentrat de pui)</p>
<p>1 lingura patrunjel tocat</p>
<p>2 linguri unt</p>
<p>1 lingurita zeama de lamaie</p>
<p>&nbsp;</p>
<p>Cum procedezi:</p>
<p>1. Curata morcovii, ciupercile si usturoiul. Taie morcovii si ciupercile bucati mai mici iar usturoiul toaca-l marunt. Pune supa la incalzit, trebuie sa fie fierbinte cand o folosesti.</p>
<p>2. Intr-o tigaie, incalzeste uleiul de masline si adauga usturoiul, dupa 30 de secunde adauga morcovii si apoi ciupercile. Caleste 5 minute amestecand din cand in cand.</p>

<p>3. Adauga orezul si prajeste totul 2-3 minute.</p>

Peste orezul prajit adauga un polonic de supa fierbinte si amesteca pana cand orezul a absorbit toata zeama. Repeta pana ti se termina supa. Gusta sa vezi daca orezul e facut, daca nu e facut mai adauga supa fierbinte. Asezoneaza cu sare si piper.</p>

<p>Serveste risotto-ul cu pui, peste sau porc, aceasta cantitate iti va ajunge pentru 4-5 persoane.</p>

<p>Nu spala ciupercile, vei pierde mult din aroma lor, nu vei face decat sa le umpli de apa. Curata-le cu o perie uscata, cu o carpa sau curata-le pur si simplu. Mai jos iti arat cum poti s-o faci.</p>
<p>Daca vrei ciuperci proaspete, cauta-le pe cele care nu au &#8216;palaria&#8217; deschisa inca.</p>
<p>Cum procedezi:</p>
<p>1. Rupe codita ciupercii cu grija.</p>

<p>200 gr. ciuperci proaspete</p>
<p>150 gr. spanac proaspat</p>
<p>100 ml lapte</p>
<p>200 ml smantana</p>
<p>5 oua</p>
<p>200 gr. branza cheddar razuita</p>
<p>4-5 fire de cimbru proaspat</p>
<p>sare/piper</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Pregateste aluatul, coace-l si lasa-l sa se odihneasca pana faci umplutura. Curata ciupercile si taie-le bucati mai mici. Spala spanacul si rupe-l in bucati daca frunzele sunt mari.</p>

<p>2.Incalzeste uleiul de masline intr-o tigaie si adauga ciupercile. Caleste pret de 1 minut.</p>

<p>3.Adauga spanacul. Mai gateste totul 4-5 minute sau pana se evapora apa lasata de ciuperci si spanac. Pune deoparte.</p>

Pernute cu ciuperci:</strong></p>
<p>Pregateste pernutele de aluat:</p>
<p>aluatul de foietaj (pe care l-ai cumparat inainte <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ) il tai cerculete cu ajutorul unui pahar. Apoi cu ajutorul unei forme cu circumferinta mai mica decat a primului pahar  tai din nou fiecare cerc doar pana la jumatatea aluatului (fara a-l perfora de tot). Pe partea aceea din mijloc pune umplutura. Marginile vor creste la cuptor si vor forma niste farfurioare foarte dragute.Nu uita sa ungi aluatul cu galbenus amestecat cu putina apa.</p>

<p>Pe partea din mijloc pune cate o lingura din urmatoarea umplutura:</p>
<p>Caleste ceapa in unt, pune apoi ciuperci taiata bucatele, sare, piper si gateste pana scade toata apa.</p>

<p>Pentru a decora cu praz (ca mai sus), procedeaza in felul urmator: taie prazul felii subtiri si lungi si caleste-l in putin unt pana devin maleabile. Asezoneaza-le cu sare si piper, si acestea vor da gust preparatului.</p>

<p><strong>2. Pernute cu branza feta:</strong></p>
<p>Procedeaza cu aluatul ca si la cele de mai sus inlocuind ciupercile cu bucati de braza feta si bucatele de masline.</p>

<p><strong>3.Carnaciori de bere in foietaj:</strong></p>
<p>Intinde aluatul de foietaj putin, pt a fi mai subtire. Taie-l in triunghiuri mici si ruleaza fiecare carnacior in cate un triunghi (ca un cornulet), lipeste la capat aluatul cu ajutorul degetelor umezite cu apa.</p>

<p>Acest pui cremos l-a cucerit pe prietenul nostru, Gabi <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Si pentru ca i-a ramas gandul la puiul asta si pentru ca ma tot intreaba cum se face&#8230; Iata reteta mai jos, draga Gabi <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p><strong>Ingrediente:</strong></p>
<p>2 linguri ulei de masline</p>
<p>4 sferturi piept de pui</p>
<p>1 ceapa mare taiata marunt</p>
<p>300 gr. ciuperci champinion proaspete (puteti combina mai multe soiuri de ciuperci: ghebe, hribi)</p>
<p>140 ml vin alb</p>
<p>200 ml frisca lichida neindulcita</p>
<p>2 linguri mustar</p>
<p>1 cub concentrat de pui</p>
<p>patrunjel tocat, cam 2 linguri pline</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Taie pieptul de pui in bucati mai mici. Pregateste-ti: ceapa taiata marunt, ciupercile taiate bucati.</p>
<p>2. Incinge uleiul intr-o tigaie si prajeste puiul pana se rumeneste pe ambele parti si e facut la mijloc, dureaza cam 20-25 minute (depinde de cat de mari sunt feliile). Scoate puiul din tigaie.</p>

<p>3. In uleiul ramas in tigaie de la prajirea puiului soteaza ceapa, apoi adauga ciupercile. Gateste pret de 3-4 minute.</p>

<p>4. Adauga vinul, mustarul, cubul concentrat si amesteca pana cand se dizolva si se omogenizeaza totul. Mentine-l pe foc timp de 3-4 minute pentru ca alcoolul din vin sa se evapore.</p>

<p>5. Pune puiul peste ciuperci, adauga frisca lichida si patrunjelul. Gusta si daca vei considera ca mai are nevoie de sare, asezoneaza.</p>

<p>1. Eu folosesc uneori in loc de frisca lichida, smantana dulce si e foarte ok si cu aceasta.</p>
<p>2. Daca nu ai vin alb, poti pune rosu fara probleme.</p>
<p>3. De obicei servesc acest pui cu <a href="http://rozealb.com/?p=374" target="_blank">orez cu nuca si morcovi</a>.</p>

Azi a fost una din zilele alea in care alerg de parca intra zilele in sac. Cand intr-un final am ajuns acasa pe la 5,30 un telefon mi-a amintit ca ma intalnesc cu fetele azi. La mine acasa, in jumatate de ora. A fost ok insa, spaghetele cu sos de rosii si ciuperci m-au scos din incurcatura.</p>

<p><strong>Ai nevoie de: </strong></p>
<p>1 lingura unt, 500 gr. ciuperci proaspete, 2 catei de usturoi, ardei iute (cantitatea depinde de cat de iute este si de cat de iute iti place), 800 ml sos de rosii , oregano, busuioc, 400 gr. spaghete (fierte in apa cu sare)</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Pune intr-o tigaie pe foc untul impreuna cu un strop de ulei (astfel untul nu se va arde). Taie marunt usturoiul si ardeiul iute, adauga-l in tigaie.</p>

<p>2. Ciupercile taiate felii le pui in tigaie si lasi sa fiarba amestecand din cand in cand, aproximativ 5 minute pana ciupercile sunt facute.</p>

<p>3. Adaugi sosul de rosii, condimentele si sare, daca este nevoie.</p>

Torna sosul peste spaghete si serveste-le calde cu parmezan ras deasupra. De asemenea e grozav in combinatie cu tarte cu usturoi.</p>

<p><strong>SFATURI <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </strong></p>
<p>1. cel mai bine e sa folosesti ciuperci proaspete, daca nu ai, le poti inlocui cu cele din conserva, dar efectul nu va fi acelasi, evident.</p>
<p>2. sosul de rosii pe care il folosesc eu la aceasta reteta este bulionul de la Olympia (astfel reteta nu mai are nevoie de sare si piper, bulionul e gata condimentat), uneori folosesc jumate bulion de casa si jumate bulion Olympia, e ok si asa. Dar poti folosi si doar bulion de casa, in acest caz insa va trebui sa fierbi mai mult sosul ca sa scada si sa se ingroase.</p>
<p>3. Spaghetele cele mai bune sunt Barilla. Pentru aceasta reteta eu folosesc Barilla nr.3, sun potrivite ca grosime.</p>
<p>4. Daca nu ai parmezan e foarte ok cu orice cas razuit.</p>
<p>5. Daca doresti sa adaugi carne la aceasta reteta: inainte de tot procesul  prezentat mai sus, pune in tigaie 1 lingura de ulei, cand acesta s-a  incins aduga 100-150 gr. carne tocata de vita sau de porc. Cand s-a  facut carnea, pune ardeiul iute si usturoiul si continua procesul de mai  sus.</p>
