<p>Mi-am cumparat &#8216;Cartea regala de bucate&#8217; a Pricipesei Margareta a Romaniei. Cand am inceput s-o rasfoiesc am apreciat imediat simplitatea ingredientelor. Asa ca m-am decis pe loc. Aceasta va fi o carte de retete care va trece des prin bucataria mea, le voi incerca pe toate mi-am zis. Este putin probabil sa se intample asa, recunosc, dar cel putin am inceput cu ceva, cu sufleul de branza propus in carte de Arhiducele Georg si Arhiducesa Eilika ai Austriei.</p>

<p><strong>Sufleu de branza:</strong></p>
<p><strong>Ingrediente:</strong></p>
<p>100 g faina alba</p>
<p>50 g amidon de porumb</p>
<p>500 ml lapte</p>
<p>60 g unt topit si lasat la racit</p>
<p>200 g cascaval sau svaiter mai uscat</p>
<p>6 oua</p>
<p>sare si piper dupa gust</p>

<p><strong>Mod de preparare:</strong></p>
<p>1. Incalzeste cuptorul la 200 grade C si razuieste cascavalul.</p>

<p>2. Amesteca laptele cu amidonul si pune la foc mic pana aproape de fierbere. Ia de pe foc si asezoneaza cu sare si piper.</p>

<p>3. Intr-o oala, la foc mic, topeste untul si adauga faina toata odata, amestecand energic pana cand untul se incorporeaza. Fierbe in continuare pana ce faina devine aurie.</p>

<p>4. Adauga laptele fiert cu amidon peste sosul de faina. Amesteca bine pana ce faina si laptele devin ca un sos foarte gros.</p>

<p>5. Dupa ce sosul s-a racit putin incorporeaza galbenusurile unul cate unul si cascavalul ras.</p>

<p>6. Bate albusurile spuma cu putin sare si incorporeaza-le in compozitia de mai sus, cu o lingura de lemn, amestecand prin rasturnare. Eu pun mai intai o lingura de albus, il incorporez si apoi adaug restul de albus.</p>

<p>7. Compozitia obtinuta trebuie folosita imediat. Unge cu unt s tapeteaza cu faina bolul pentru sufleu. Introdu la cuptorul incalzit  pentru 30-35 de minute. Eu am folosit un bol mare, daca folosesti boluri din alea mici de sufleu, atunci lasa la cuptor 20 de minute.</p>

<p>200 gr. biscuiti digestivi</p>
<p>80 gr. unt</p>
<p>3 linguri faina alba</p>
<p>200 gr. zahar</p>
<p>500 gr. fructe: mure si zmeura</p>
<p>3 oua + 1 galbenus</p>
<p>1 pachetel vanilie</p>
<p>200 ml smantana</p>
<p>650 gr. branza de vaci</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C. Zdrobeste biscuitii si amesteca-i cu untul topit.</p>

<p>2. Tapeteaza o forma rotunda (cu fundul detasabil) cu hartie de copt. Unge marginile tavii cu ulei.</p>
<p>3. Aseaza biscuitii amestecati cu unt in tava si taseaza bine. Da la cuptorul incins pentru 5 minute. Scoate de la cuptor si lasa sa se raceasca.</p>

<p>4. Intr-un bol mare amesteca branza si smantana cu faina si zaharul, inclusiv zaharul vaniliat. Mixeaza pana se omogenizeaza, adauga ouale si mixeaza din nou.</p>

<p>5. Pune jumatate din fructe in compozitie si amesteca cu grija sa nu zdrobesti fructele.</p>

<p>6. Toarna aluatul peste biscuiti si da la cuptor pentru 40 minute. Cand e gata e ferma la atingere dar destul de moale la interior, daca misti tava aluatul inca se &#8216;clatina&#8217;. Pe masura ce se raceste se va intari.</p>

<p><strong>Ingrediente:</strong></p>
<p>2 l apa</p>
<p>1 lingurita sare</p>
<p>500-600 gr. faina de malai (depinde cat de tare vrei sa fie)</p>
<p>300 gr. cas razuit (sau o combinatie, eu am folosit o parte moeciu, o parte branza burduf si o parte feta)</p>
<p>100 ml smantana</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Pune apa cu sare intr-o oala. Cand aceasta fierbe, adauga faina de malai in ploaie amestecand rapid cu telul. E important sa pui toata faina de la inceput, altfel ti se vor forma cocoloase. Fierbe 15-20 minute pana se intareste. Tine minte ca pe masura ce se raceste se va mai intari.</p>

<p>2. Intr-un vas mai mare incepe sa faci straturile. Pune mai intai cateva linguri de mamaliga, apoi 1 lingura de smantana si preseaza cu ajutorul unei linguri. Presara branza si iar un strat de mamaliga.</p>

<p>Ingrediente:</p>
<p>180 gr. faina alba</p>
<p>sare/piper</p>
<p>1 ou intreg</p>
<p>80 ml lapte</p>
<p>100 ml ulei vegetal</p>
<p>1 praf de copt</p>
<p>100 gr. cas razuit</p>
<p>3 lingurite branza de burduf</p>
<p>1 praz taiat marunt</p>

<p>Cum procedezi:</p>
<p>1. Pune faina, sarea, piperul si praful de copt intr-un bol. Amesteca impreuna oul, uleiul si laptele.</p>

<p>2. Adauga ingredientele lichide la cele uscate si amesteca. Adauga branza de burduf, prazul si casul razuit.</p>

<p>3. Pune aluatul in paharele de hartie pentru briose si da la cuptorul incins la 200 grade C pentru 5 minute, fa focul mai mic la 180 grade si mai lasa la cuptor 15-20 minute.</p>

<p>450 gr. biscuiti inveliti in ciocolata</p>
<p>180 gr. unt moale</p>
<p>1 lingura cacao</p>
<p>&nbsp;</p>
<p><strong>Umplutura</strong></p>
<p>500 gr.branza de vaci grasa</p>
<p>100 gr. ciocolata alba</p>
<p>100 gr. zahar pudra</p>
<p>300 ml frisca</p>
<p>un pachetel de gelatina</p>
<p>2 oua</p>
<p>cacao pentru ornat</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Tapeteaza o forma rotunda cu fundul detasabil (de 28 cm) si unge marginile cu ulei vegetal. Zdrobeste biscuitii intr-un mixer de bucatarie sau manual intr-o punga cu ajutorul sucitorului. Amesteca untul cu biscuitii zdrobiti si cacaua. Amestecul trebuie sa fie sfarmicios.</p>

<p>2. Toarna amestecul de biscuiti si unt in tava si indeasa bine aluatul pentru a forma o baza pentru umplutura. Poti face asta cu mainile umezite sau cu o lingura.</p>

<p>3. Intr-un bol mic pune 150 ml apa rece si presara un plic de gelatina deasupra, lasa sa stea asa 10 minute. Apoi pune bolul deasupra unei oale cu apa care fierbe, amestecand continuu pana cand cristalele de gelatina s-au topit. Ia de pe foc si lasa la racit.</p>

<p>4. Topeste ciocolata folosind aceeasi tehnica, intr-un bol deasupra unei oale in care fierbe apa.</p>
<p>5. Bate branza, galbenusurile si zaharul cu mixerul pana se omogenizeaza bine. Apoi adauga in jet subtire gelatina care s-a racit (daca gelatina e fierbinte umplutura s-ar putea sa formeze cocoloase) si apoi ciocolata racita.</p>

<p>6. Bate frisca tare si adauga la aluatul de branza mai intai o lingura, amesteca bine apoi amestecand cu grija restul de frisca. Bate albusurile tare si procedeaza la fel.</p>

<p>7. Toarna umplutura peste baza de biscuiti, uniformizeaza acopera cu folie transparenta si da la frigider peste noapte sau cel putin 3-4 ore inainte de a servi.</p>

<p>Aceasta tarta cremoasa cu praz se poate servi atat la micul dejun, cat si ca aperitiv. E delicioasa servita cu salata de rosii. Daca se mai adauga si niste sunca coapta la cuptor, devine extrem de consistenta, saturand orice flamand <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Cand o vei taia, iti vor iesi cam 10 felii destul de mari.</p>

<p>85 gr. unt</p>
<p>800 gr. praz taiat bucati de 1-2 cm marime</p>
<p>o lingura faina</p>
<p>300 ml lapte</p>
<p>200 ml smantana</p>
<p>2 oua si 4 galbenusuri</p>
<p>100 gr. branza dupa preferinta</p>
<p>1 lingurita mustar</p>

<p><strong>Cum procedezi:</strong></p>
<p>Pregateste aluatul, coace-l si lasa-l sa se odihneasca.</p>
<p>Preparare umplutura:</p>
<p>1. Intr-o tigaie pune untul, cand acesta s-a topit, adauga prazul. Caleste la foc mic timp de 20-25 minute amestecand des. Asezoneaza dupa gust cu sare si piper.</p>

<p>2. Adauga lingura de faina si continua sa gatesti pentru 3-4 minute. Toarna laptele si smantana si fiebe la foc mic pt inca 15 minute. Raceste compozitia.</p>

<p>(Poti face amestecul acesta cu 2 zile inainte de a coace tarta, trebuie doar ca amestecul astfel gatit sa-l pui intr-un recipient acoperit cu folie transparenta la frigider.)</p>
<p>3. Dupa ce s-a racit adauga ouale si galbenusurile batute bine impreuna si de asemenea branza rasa si mustarul.</p>

<p>4. Toarna umplutura in aluatul copt si odihnit si da din nou la cuptorul incins la 180 grade pentru 30 de minute.</p>

<p>Se serveste la temperatura camerei.</p>
<p>Daca vrei s-o pregatesti dinainte, poti s-o congelezi gata coapta in folie transparenta pana la 1 saptamana. O poti decongela dand-o la cuptor pentru 10-15 minute sau lasand-o la temperatura camerei pret de cateva ceasuri.</p>
