<p>Vine weekendul! Vei avea timp, vei fi relaxat/a si foarte probabil, la un moment dat, vei avea pofta de ceva dulce. Incearca prajitura asta cu ciocolata si ricotta. E bogata in ciocolata, in acelasi timp e moale si pufoasa. Ricotta cu aroma ei specifica se potriveste perfect. Ca sa nu mai zic si ca e foarte simplu de facut. Asa ca&#8230; spor la gatit si pofta buna!</p>
<p>&nbsp;</p>
<p><strong>Ai nevoie de:</strong></p>
<p>100 g unt</p>
<p>125 g zahar</p>
<p>un varf de cutit de sare</p>
<p>200 g ciocolata (continut de cacao: cel putin 40%)</p>
<p>3 oua</p>
<p>80 g faina alba</p>
<p>jumate lingurita praf de copt</p>
<p>1 lingura cacao</p>
<p><em>Amestecul de branza:</em></p>
<p>250 g ricotta</p>
<p>2 galbenusuri</p>
<p>100 g zahar</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C si pregateste-ti o tava mica (eu am folosit una de 28/40cm) acoperind atat fundul cat si marginile cu hartie de copt.</p>
<p>2. Pune untul si ciocolata intr-o tigaie la foc mic. Cand s-au topit ia de pe foc si adauga zaharul si sarea, apoi ouale pe care le-ai batut impreuna in prealabil.</p>

<p>3. Trece prin sita faina, cacaua si praful de copt. Incorporeaza ciocolata si toarna in tigaie.</p>

<p>4. Pune branza, galbenusurile si zaharul intr-un bol si amesteca bine. Pune cate o lingura plina de amestec de branza din loc in loc peste aluatul de ciocolata din tava. Folosind un cutit trage branza prin aluatul de ciocolata, doar cat sa se formeze efectul marmorat. Introdu in cuptorul incins pentru 30-35 minute sau pana cand in mijlocul tavii aluatul a facut coaja dar e inca miscator. Lasa sa se raceasca in tava inainte de a taia felii.</p>

<p>Mi-a fost greu sa-i dau un nume acestei prajituri, pentru ca nu e nici Pavlova, nici Piscot. Important e ca e usoara, delicata si mai ales delicioasa. E un desert elegant obtinut cu putin efort si cu doar cateva ingrediente. Se potriveste si in zilele calde de vara si iarna langa semineu. Nu contine faina, ceea ce o face potrivita si  pentru cei care nu consuma gluten. O poti orna cu ce fructe doresti, eu am optat pentru capsuni, zmeura si cateva alune in zahar ars ca sa amintesc de aroma din prajitura.</p>

<p><strong>Ai nevoie de:</strong></p>
<p>6 oua la temperatura camerei</p>
<p>un varf de cutit de sare</p>
<p>230 g alune de padure</p>
<p>200 g zahar</p>
<p>Pentru ornat:</p>
<p>300 ml frisca</p>
<p>300 g capsuni</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade Celsius. Ai nevoie de o tava rotunda de 23 de cm (cu fund detasabil). Unge bine cu unt si pune pe fundul acesteia o hartie de copt.</p>

<p>2.Prajeste alunele de padure intr-o tigaie pe foc sau in cuptor, cum doresti. Daca te deranjeaza coaja lor, dupa ce le-ai copt, aseaza-le intr-un prosop de bucatarie si freaca-le cu mainile prin prosop. Eu am lasat si cojile. Marunteste prin ce metoda doresti <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> , eu am folosit robotul de bucatarie (am lasat si bucatele mai mari pentru textura).</p>

<p>3. Separa ouale. Pune galbenusurile intr-un bol mare impreuna cu zaharul. Bate cu mixerul 3-5 minute pana cand compozitia se umfla si devine palida.</p>

<p>4. Pune alunele maruntite in aluat si amesteca.</p>

<p>5. Bate albusurile spuma tare. Daca pui un varf de cutit de sare se vor bate mai usor.</p>

<p>6. Pune mai intai o lingura mare de spuma la aluat si amesteca bine. Adauga si restul de spuma, amesteca cu grija pana cand se incorporeaza.</p>

<p>7. Toarna aluatul in tava si coace in cuptorul incins pentru 35-40 minute sau pana cand o scobitoare introdusa in aluat iese curata.</p>

E preferata lor, dar nu pot spune ca a gustat-o cineva fara sa exclame vreun &#8216;ah&#8217; sau &#8216;oh&#8217; sau &#8216;iam&#8217; <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . Are straturi crocante, are gem de caise acrisor, are nuca si bezea&#8230; mai are rost sa va descriu cum e? Cred ca va imaginati deja gustul <img src='https://rozealb.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> . Singura problema cu aceasta prajitura e sa stii cand sa te opresti din mancat.</p>

<p>1 praf de copt</p>
<p>1 lingurita sare</p>

<p>325 g unt (un unt si jumate)</p>
<p>15 linguri de miez de nuca macinat</p>
<p>7 linguri cu varf de gem de caise</p>
<p><strong>Pentru bezea:</strong></p>
<p>2 linguri cu varf de miez de nuca macinat</p>
<p>150 g zahar</p>
<p>3 albusuri</p>

<p><strong>Cum procedezi:</strong></p>
<p>1.Trece prin sita faina cu praful de copt si cu sarea. Adaug-o peste untul moale taiat cuburi. Adauga si zaharul. Amesteca cu mainile strangand aluatul printre degete.</p>

<p>2. Toarna smantana si lucreaza din nou aluatul. Adauga galbenusurile si lucreaza pana se omogenizeaza.</p>

<p>3. Taie un sfert din aluat si pune-l deoparte intr-o punga (sau in folie) la frigider. Restul de aluat intinde-l intr-o foaie asezandu-l apoi pe o tava intinsa. Eu am folosit tava mare a cuptorului.</p>

<p>5. Acum amesteca miezul de nuca cu gemul si toarna-l peste aluatul din tava. Intinde intr-un strat subtire.</p>

<p>6. Pentru a face bezeaua, bate albusurile spuma apoi adauga treptat zaharul amestecand in continuare, iar la final miezul de nuca. Toarna compozitia peste stratul cu gem si niveleaza.</p>

<p>Dragilor si dragelor, azi va propun un desert delicios, fin, pufos si pasional pentru o celebrare a dragostei voastre intr-un stil regal. Reteta este din Cartea Regala de bucate a Pricipesei Margareta a Romaniei.</p>
<p>Am modificat putin cantitatile de zahar si de unt fata de reteta din carte.</p>

<p><strong>Ai nevoie de:</strong></p>

<p>300 g biscuiti digestivi (eu am folosit 200 g digestivi si 100 g petite beurre)</p>
<p>2 linguri zahar pudra</p>
<p>100 g unt topit</p>
<p>In carte zicea ca daca doresti poti pune si scortiosara, eu nu am folosit de data aceasta.</p>
<p><strong>Pentru umplutura:</strong></p>
<p>1 plic de gelatina</p>
<p>60 ml apa rece</p>
<p>450 g branza cremoasa Philadelphia</p>
<p>100-150 g zahar (eu am pus 130 g)</p>
<p>1 praf de sare</p>
<p>200 ml smantana grasa</p>
<p>200 g smantana dulce pentru frisca</p>
<p><strong>Pentru sosul de afine:</strong></p>
<p>200 g afine</p>
<p>2 linguri apa</p>
<p>100 g zahar</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Faramiteaza blatul. Eu am folosit robotul de bucatarie, dar ii poti pune intr-o punga, ii lovesti cu sucitorul si rezultatul e acelasi. Pune biscuitii intr-un bol, adauga untul topit si zaharul, amesteca bine.</p>

<p>2. Inveleste o tava rotunda cu fundul detasabil in folie de aluminiu. Toarna biscuitii in tava si preseaza cu o lingura umezita ca sa nivelezi.</p>

<p>3. Pune apa rece intr-o oala mica. Toarna praful de gelatina deasupra si lasa 5-6 minute la inmuiat. Apoi porneste focul la mic si dizolva gelatina.</p>

<p>4. Bate branza cu mixerul sau telul pana devine o crema moale.</p>

<p>5. Adauga incet gelatina, amestecand pana compozitia devine omogena. Adauga zaharul si sarea si amesteca bine pana ce aluatul devine usor si pufos.</p>

<p>6. Bate frisca pana se intareste. Toarna smantana peste frisca, apoi toarna aluatul peste blatul de biscuiti. Uniformizeaza suprafata cremei. Acopera cu folie si da la frigider peste noapte sau cel putin 4-5 ore.</p>

<p>7. Pentru sirop, pune intr-o tigaie la foc mediu o treime din afine, cu doua linguri de apa si zaharul pana cand acesta se topeste si afinele se sfarama. Fierbe cateva minute, 5-6 minute. Strecoara siropul si adauga afinele crude puse deoparte. Aseaza siropul la frigider.</p>

<p>Prajitura cu visine este clasica, traditionala in orice familie din Ardeal. Se face rapid, cu resurse putine, cu ceea ce ai prin casa si prin gradina cum s-ar zice <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> . E o varianta excelenta si pentru copiii tai, cu siguranta vor fi incantati. Eu am pregatit-o ca s-o savurez langa un ceai aburind impreuna cu prietenele in seara asta.</p>

<p>4 oua</p>
<p>10 linguri cu varf de zahar</p>
<p>2 linguri de zahar vanilat</p>
<p>10 linguri apa rece</p>
<p>10 linguri ulei de floarea soarelui</p>
<p>250 g faina alba</p>
<p>1 praf de copt</p>
<p>un compot de 400 ml de visine fara samburi</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Pune ouale intr-un bol impreuna cu zaharul. Amesteca bine cu mixerul pana se umfla toata compozitia putin, cam 2 minute.</p>

<p>2. Batand in continuare cu mixerul, adauga cate o lingura de apa pana cand o termini. Procedeaza la fel si cu uleiul.</p>

<p>4. Strecoara visinele de zeama.</p>

<p>5. Unge cu ulei si tapeteaza cu faina o forma de copt. Pune jumate din visine pe fundul tavii. Toarna aluatul in tava si adauga si restul de visine deasupra. Introdu in cuptorul incins la 170 de grade pentru 30-35 minute.</p>

Baigli e o prajitura care arata ca un cozonac , dar are aluat fraged si umplutura e din belsug. Cel cu mac e preferatul meu si parca dupa cateva zile mi se pare si mai bun.</p>
<p>Mai jos ai reteta, exemplificarea in imagini este de la baigli cu mac, dar se procedeaza la fel ca la cel cu mac, doar umplutura difera <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p>1 kg faina alba</p>
<p>250 g margarina nesarata</p>
<p>3 galbenusuri</p>
<p>200 ml smantana</p>
<p>10 linguri zahar (poate chiar 12-15 in functie de cat de dulce doresti sa fie)</p>
<p>jumate lingurita sare</p>
<p>1 plic de drojdie uscata</p>
<p>150 ml lapte caldut</p>
<p><em>Iti ies 4 baigli din cantitatea de mai sus.</em></p>
<p><em>Cantitatile de la umpluturi sunt pentru 4 baigli, daca vrei sa faci 2 cu mac si 2 cu nuca, injumatateste cantitatile.</em></p>

<p><strong>Umplutura de mac:</strong></p>
<p>500 g mac macinat</p>
<p>1 lingura esenta de vanilie (naturala) sau 2 linguri zahar vaniliat</p>
<p>300 ml lapte</p>
<p>250 g zahar</p>
<p>optional: 100 g stafide</p>
<p>optional: coaja de lamaie</p>

<p><strong>Umplutura de nuca:</strong></p>
<p>500 g nuca macinata</p>

<p>3 albusuri batute spuma</p>

<p><strong>Pentru uns: </strong>1 galbenus batut cu 2 linguri de apa.</p>

<p><strong>Cum faci umplutura de mac:</strong></p>
<p>Amesteca macul macinat cu zaharul, vanilia si laptele pe care l-ai incalzit in prealabil. Adauga si coaja de lamaie sau stafidele, daca ai optat pentru ele. Lasa sa stea deoparte 10 minute pana se absoarbe bine laptele.<strong><br />

<p>Amesteca nuca macinata cu zaharul si cu albusurile batute spuma. Adauga si stafidele, daca ai optat pentru ele.</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Cerne faina si sarea intr-un bol mare. Adauga margarina taiata cuburi si zaharul. Trece prin palme ingredientele astea pana se transforma intr-un aluat faramicios.</p>

<p>3. Rastoarna totul pe o suprafata presarata cu faina si framanta doar pana cand se formeaza un aluat bun de intins.</p>

<p>4. Imparte aluatul in 4. Intinde fiecare foie cat mai subtire. Pune umplutura si formeaza o rulada. Repeta cu fiecare din cele 4 bucati de aluat.</p>

<p>5. Aseaza in tava tapetata cu hartie de copt si unge cu galbenus. Lasa sa stea 15 minute. Intre timp incalzeste cuptorul la 170 grade C. Da tava la cuptor pentru 20 minute-25 minute sau pana cand se rumeneste bine deasupra.</p>

Acest chec nu e deloc plictisitor, e plin de aroma, nu e uscat si e plin textura, iar de miros nu mai vorbesc, scortisoara si portocala, nuca si morcovii iti trezesc sentimentul ca e Craciun <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p><strong>Ingrediente:</strong></p>
<p>450 g faina alba</p>
<p>200 g unt moale</p>
<p>4 oua</p>
<p>1 praf de copt</p>
<p>1 lingurita praf de scortisoara</p>
<p>jumate de lingurita de sare</p>
<p>250 g zahar brun</p>
<p>100-120 g zahar alb</p>
<p>2 linguri zeama de lamaie+ 2 linguri coaja</p>
<p>2 linguri zeama de portocala + 2 linguri coaja</p>
<p>500 g morcovi razuiti marunt</p>
<p>150 g nuca taiata bucati</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Amesteca intr-un bol ingredientele uscate: faina, sarea, praful de copt, scortisoara.</p>

<p>2. Intr-un alt bol mixeaza untul moale cu zaharul. Adauga 2 oua intregi, amesteca bine pana se omogenizeaza, apoi adauga celelalte 2 oua si procedeaza la fel. Adauga coaja de lamaie.</p>

<p>3. Adauga morcovii razuiti marunt.</p>

<p>4. Pune si nuca pe care ai taiat-o bucati cat de marunt doresti.</p>

<p>5. Toarna jumate din amestecul uscat peste aluat si amesteca cu o  lingura mare. Toarna si zeama de portocale si lamaie, amesteca.  Adauga  si restul de faina.</p>

<p>6. Unge cu unt si tapeteaza cu faina o tava. Toarna aluatul in ea si da la cuptorul incins la 180 grade C pentru 50 minute.</p>

<p>7. Scoate tava din cuptor si rastoarna checul pe un platou de servit. Daca doresti, poti pune deasupra un amestec de zeama de lamaie si portocala amestecat cu zahar pudra.</p>

<p>160 g zahar (daca iti plac prajiturile dulci va trebui sa folosesti mai mult zahar)</p>
<p>300 g faina alba</p>
<p><strong>Pentru finisare:</strong></p>
<p>zeama de la 1 lamaie</p>
<p>4-5 linguri zahar pudra</p>
<p>100 g gem de caise</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Curata merele de coaja si de casuta samburilor. Taie in patratele de 2 cm. Razuieste coaja de lamaie si pune-o deoparte. Stoarce lamaia si stropeste merele cu zeama.</p>

<p>2. Adauga la mere ghimbirul si nuca tocata bucatele cat de mici sau mari doresti.</p>

<p>3. Bate cu mixerul untul impreuna cu zaharul si coaja de lamaie. Adauga ouale (cate unul pe rand, de abea cand se inglobeaza bine il adaugam pe urmatorul).</p>

<p>4. Cerne faina impreuna cu praful de copt peste si amesteca bine.</p>

<p>5. Tapeteaza tava cu unt si faina (intinde bine untul pe toata suprafata tavii, pune o lingura de faina si scutura tava ca faina sa imbrace bine toate marginile, scapa de excesul de faina).</p>

<p>6. Toarna aluatul in tava, niveleaza si da la cuptorul incins la 200 grade C pentru 30 minute. Dupa cele 30 min scade temperatura la 180 si coace inca 30 minute.</p>

<p>1. Incalzeste cuptorul la 180 grade C. Zdrobeste biscuitii si amesteca-i cu untul topit.</p>

<p>2. Tapeteaza o forma rotunda (cu fundul detasabil) cu hartie de copt. Unge marginile tavii cu ulei.</p>
<p>3. Aseaza biscuitii amestecati cu unt in tava si taseaza bine. Da la cuptorul incins pentru 5 minute. Scoate de la cuptor si lasa sa se raceasca.</p>

<p>4. Intr-un bol mare amesteca branza si smantana cu faina si zaharul, inclusiv zaharul vaniliat. Mixeaza pana se omogenizeaza, adauga ouale si mixeaza din nou.</p>

<p>5. Pune jumatate din fructe in compozitie si amesteca cu grija sa nu zdrobesti fructele.</p>

<p>6. Toarna aluatul peste biscuiti si da la cuptor pentru 40 minute. Cand e gata e ferma la atingere dar destul de moale la interior, daca misti tava aluatul inca se &#8216;clatina&#8217;. Pe masura ce se raceste se va intari.</p>

<p><strong>Ingrediente</strong></p>
<p>Pentru foi:</p>
<p>1 ou intreg</p>
<p>2 linguri miere de albine</p>
<p>7 linguri lapte</p>
<p>70 gr. unt/margarina</p>
<p>1 lingurita bicarbonat</p>
<p>7 linguri de zahar</p>
<p>aprox 450 gr. faina</p>
<p>gem de caise</p>
<p>optional: 150 gr. ciocolata pentru glazura</p>
<p>Pentru crema:</p>
<p>500 ml lapte</p>
<p>5 linguri faina</p>
<p>6 linguri zahar</p>
<p>200 gr. unt moale</p>
<p>zeama de la 1 lamaie</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Amesteca intr-o cratita oul batut, mierea, zaharul, laptele, untul si bicarbonatul. Pune la foc mic si amesteca in continuu. Cand ajunge ca o spuma ia de pe foc. Adauga faina treptat pana se formeaza un aluat bun de intins.</p>

Imparte aluatul in 4 si intinde 4 foi subtiri (va trebui sa te misti repede cu aluatul, pe masura ce se raceste se intareste si iti va fi mai greu sa-l intinzi). Eu folosesc hartie de copt ca sa nu se lipeasca aluatul de tava. Coc foile pe fundul tavii la 170 grade C pentru 4 minute. Pune foile deoparte. (eu le cladesc una peste alta cu tot cu hartia pe ele)</p>

Pentru crema, pune laptele, faina si zaharul (eu adaug mai intai o parte din faina, amestec si pe urma pun restul fainii, astfel evit cocoloasele) in tigaie si incalzeste pe foc amestecand in continuu pana incepe sa se intareasca (ca la budinca). Ia de pe foc si lasa sa se raceasca. Daca doresti sa nu faca pojghita, pune pe suprafata cremei o folie de plastic. In poza 4 din colajul de mai jos vezi cum arata crema dupa ce s-a racit, s-a intarit.</p>

<p>4. Cand s-a racit de tot adauga untul moale (e important ca untul sa fie  moale pentru ca astfel se va incorpora uniform in crema). Amesteca bine,  apoi toarna cate putin din zeama de lamaie si gusta crema, adaugand  lamaie pana cand ti se pare suficient.</p>

Aseaza o foaie pe care toarna o parte din crema de lamaie, intinde crema si aseaza urmatoarea foaie. Intinde gem de caise, un alt rand de foie si apoi inca unul de crema de lamaie. Incheie cu o alta foaie.</p>

Daca ai optat pentru glazura, topeste ciocolata impreuna cu 3 linguri de lapte. Toarna deasupra praiturii si pune la frigider.</p>
