<p>Desi pare foarte complicat din pricina multor fotografii si a nesfarsitelor ingrediente, e un tort/tarta foarte usor de facut, are doar cateva mici secrete esentiale pe care daca le respecti intocmai vei savura un tort cu fructe absolut decilios si racoritor. Eu am invatat sa-l fac de la mama, ei ii place foarte mult acest tort cu fructe.</p>
<p><strong>Ai nevoie de:</strong></p>
<p><strong>Pentru tarta:</strong></p>
<p>3 oua</p>
<p>6 linguri zahar</p>
<p>4 linguri apa calduta</p>
<p>6 linguri faina alba</p>
<p>1 praf de copt</p>
<p>1 lingura de esenta de vanilie (naturala)</p>
<p><strong>Pentru budinca:</strong></p>
<p>jumate pachet pentru budinca de vanilie (eu am folosit de la Dr. Oetker)</p>
<p>250 ml lapte</p>
<p>2 linguri zahar</p>
<p><strong>Pentru gelatina:</strong></p>
<p>1 pachet de Tort-Gelee de la Dr.Oetker</p>
<p>240 ml apa rece</p>
<p>2 linguri rase de zahar</p>
<p><strong>Pentru decorul cu fructe:</strong></p>
<p>Ce fructe doresti tu, feliate cum doresti si dupa imaginatia ta.</p>
<p>Eu am folosit:</p>
<p>1 conserva de ananas feliat</p>
<p>1 kiwi</p>
<p>cateva visine din compot la care le-am scos samburii</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Incalzeste cuptorul la 180 grade C.</p>
<p>2. Pune galbenusurile si zaharul intr-un bol si amesteca cu mixerul 2 minute la viteza medie. Adauga lingurile de apa pe rand amestecand in continuu.</p>

<p>3. Amesteca faina cu praful de copt. Adauga la aluatul de mai sus si mixeaza pana se omogenizeaza.</p>

<p>4. Toarna si vanilia si omogenizeaza compozitita.</p>

<p>5. Bate albusurile spuma tare. Pentru a se bate bine adauga un varf de cutit de sare.</p>

<p>6. Adauga albusurile la compozitia de ou, amestecand cu grija prin invaluire de sus in jos. Nu amesteca decat cat este nevoie ca alubusurile sa fie incorporate, altfel aluatul nu va mai iesi atat de pufos ci se va intari si va fi mai indesat.</p>

<p>5. Unge cu unt o tava de tarta cu diamentrul de 26-28 cm si tapeteaza cu faina.</p>

<p>6. Toarna aluatul in tava si introdu in cuptorul incins pentru 15-20 minute sau pana cand se rumeste usor deasupra si o scobitoare introdusa in aluat iese curata.</p>

<p>7. Scoate blatul din tava si lasa putin sa se raceasca. Insiropeaza blatul cu sucul de la compotul de ananas.</p>

<p>8. Pregateste-ti budinca. Pune praful de budinca, zaharul si putin lapte intr-o oala mica si amesteca bine cu telul pana dispar cocoloasele. Toarna restul de lapte si pune la foc mediu amestecand in continuu pana se ingroasa.Toarna budinca peste aluat si niveleaza.</p>

<p>9. Decoreaza cu fructe cat mai repede, inainte sa se intareasca budinca.</p>

<p>10. Intr-o oala aseaza gelatina, zaharul si apa si amesteca bine. Pune oala pe foc mediu, la inceput lichidul va avea aspectul din poza de mai jos, destul de tulbure. Amesteca pana cand lichidul se limpezeste. Ia de pe foc si lasa sa se raceasca 2 minute apoi toarna peste tortul de fructe, asigurandu-te ca totul este acoperit cu gelatina. Aceasta pas e important deoarece va pastra aspectul proaspat al tartei si in special al fructelor.</p>

<p>Cand eram eu mica, Clujul avea Oraselul copiilor, nu stiu cati va mai aduceti aminte. Mergeam acolo de obicei duminica, sambata nu era posibil, era program administrativ acasa (curatenie, mancare, baita si apoi telenciclopedia <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ). In oraselul asta ne dadeam cu trenuletul, ne faceam prieteni noi printre copiii pe care ii intalneam acolo si bineinteles, parintii ne cumparau fie vata de zahar, fie mare glazurate. Imi amintesc cu drag de acele vremuri <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p><strong>Ai nevoie de:</strong></p>
<p>2 mere (eu am folosit Granny Smith pentru ca sunt ferme si mai acrisoare, in plus imi palce si culoarea lor)</p>
<p>200 g zahar (alb sau brun)</p>
<p>2-3 linguri apa</p>
<p>2 bete de lemn</p>
<p>hartie de copt</p>
<p>optional: colorant alimentar (eu am folosit rosu)</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Spala bine merele, sterge-le si infige cate un bat de lemn in ele, eu am folosit betigase chinezesti.</p>

<p>2. Pune zaharul intr-o oala, toarna si apa si aseaza la foc mic.</p>

<p>3. Adauga si colorantul si lasa oala pe foc scuturand-o din cand in cand. Nu amesteca chiar daca vei fi tentata. Zaharul se va topi incet, va deveni lichid, va bolborosi insa printre bulbuci vei observa ca lichidul devine trasparent. In momentul acela iei oala de pe foc.</p>

<p>4. Dai merele prin aceasta glazura si le asezi pe un platou pe care ai asezat hartie de copt. Cu zaharul trebuie sa te misti repede si cu grija. Repede, pentru ca se intareste pe masura ce se raceste si cu grija pentru ca pericolul sa te arzi e mare, caramelul e foarte fierbinte.</p>

<p>1. Daca doresti, poti da merele caramelizate si prin nuca, migdale, alune prajite si tocate marunt.</p>

Baigli e o prajitura care arata ca un cozonac , dar are aluat fraged si umplutura e din belsug. Cel cu mac e preferatul meu si parca dupa cateva zile mi se pare si mai bun.</p>
<p>Mai jos ai reteta, exemplificarea in imagini este de la baigli cu mac, dar se procedeaza la fel ca la cel cu mac, doar umplutura difera <img src='https://rozealb.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p><strong>Ai nevoie de:</strong></p>
<p>1 kg faina alba</p>
<p>250 g margarina nesarata</p>
<p>3 galbenusuri</p>
<p>200 ml smantana</p>
<p>10 linguri zahar (poate chiar 12-15 in functie de cat de dulce doresti sa fie)</p>
<p>jumate lingurita sare</p>
<p>1 plic de drojdie uscata</p>
<p>150 ml lapte caldut</p>
<p><em>Iti ies 4 baigli din cantitatea de mai sus.</em></p>
<p><em>Cantitatile de la umpluturi sunt pentru 4 baigli, daca vrei sa faci 2 cu mac si 2 cu nuca, injumatateste cantitatile.</em></p>

<p><strong>Umplutura de mac:</strong></p>
<p>500 g mac macinat</p>
<p>1 lingura esenta de vanilie (naturala) sau 2 linguri zahar vaniliat</p>
<p>300 ml lapte</p>
<p>250 g zahar</p>
<p>optional: 100 g stafide</p>
<p>optional: coaja de lamaie</p>
<p>&nbsp;</p>
<p><strong>Umplutura de nuca:</strong></p>
<p>500 g nuca macinata</p>
<p>250 g zahar</p>
<p>3 albusuri batute spuma</p>
<p>optional: 100 g stafide</p>

<p><strong>Pentru uns: </strong>1 galbenus batut cu 2 linguri de apa.</p>

<p><strong>Cum faci umplutura de mac:</strong></p>
<p>Amesteca macul macinat cu zaharul, vanilia si laptele pe care l-ai incalzit in prealabil. Adauga si coaja de lamaie sau stafidele, daca ai optat pentru ele. Lasa sa stea deoparte 10 minute pana se absoarbe bine laptele.<strong><br />

<p>4. Imparte aluatul in 4. Intinde fiecare foie cat mai subtire. Pune umplutura si formeaza o rulada. Repeta cu fiecare din cele 4 bucati de aluat.</p>

<p>5. Aseaza in tava tapetata cu hartie de copt si unge cu galbenus. Lasa sa stea 15 minute. Intre timp incalzeste cuptorul la 170 grade C. Da tava la cuptor pentru 20 minute-25 minute sau pana cand se rumeneste bine deasupra.</p>

<p><strong>Ingrediente:</strong></p>
<p><strong>Pentru caramel:</strong></p>
<p>200 g zahar</p>
<p>40 g apa</p>
<p><strong>Pentru umplutura:</strong></p>
<p>8 oua</p>
<p>1 l lapte</p>
<p>un varf de cutit de sare</p>
<p>180 g zahar</p>
<p>coaja de la 1 lamaie</p>
<p>1 lingura esenta de vanilie</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1. Pune o oala pe foc, cand aceasta s-a incalzit adauga zaharul si apa. Scutura oala, iar cand incepe sa prinda culoare (cam dupa 6 minute) foloseste o lingura de lemn sa amesteci.</p>

Toarna caramelul intr-un vas termorezistent si incearca sa intinzi caramelul (cu foarte mare grija sa nu arzi) si pe marginile vasului.</p>

Pune oala in care a fost caramelul inapoi pe foc, adauga laptele, sarea, zaharul si vanilia. Lasa-le sa dea in clocot.</p>

<p>4. Intre timp intr-un bol mare sparge ouale si razuieste coaja de lamaie (pe langa aroma ia si din gustul puternic de ou al desertului). Amesteca bine cu telul.</p>

<p>5. Toarna peste oua putin din laptele cald, amestecand energic, apoi toarna si restul laptelui incet. Amesteca bine. Strecoara.</p>

<p>8. Pune in cuptorul incins la 150 grade C pentru 60 minute.</p>

<p>Note:</p>
<p>1. Daca folosesti vase pentru portii individuale, atunci va trebui sa le  lasi la cuptor mult mai putin, probabil undeva la 30 minute.</p>
<p>2. Daca doresti sa folosesti mai putine oua, poti folosi doar 5-6 oua si inlocuiesti 500 ml de lapte cu frisca lichida sau lapte mult mai gras.</p>
<p>3. Cantitatea de mai sus inseamna vreo 8 portii.</p>

<p><strong>Ingrediente:</strong></p>
<p>500 gr. faina</p>
<p>4 oua</p>
<p>150 gr. nuca macinata</p>
<p>200 gr. zahar pudra</p>
<p>250 gr. unt rece</p>
<p>3 linguri cacao</p>
<p>2 lingurite cafea</p>
<p>200 gr. nuca tocata bucati mai mari</p>
<p>&nbsp;</p>
<p><strong>Cum procedezi:</strong></p>
<p>1.Separa galbenusurile de albusuri. Albusul pune-l deoparte deocamdata. Intr-un bol (sau direct pe blatul de lucru, cum doresti) pune zaharul pudra, nuca macinata, faina, untul taiat bucati si galbenusurile. Amesteca si framanta rapid intr-un aluat.</p>

Imparte aluatul in doua si in jumatate de aluat pune cacaua si cafeaua. Framanta din nou pana se formeaza un aluat maro.</p>

Acum ai doua feluri de aluat unul deschis la culoare si unul maro. Inveleste-le in folie sau in pungi si pune la frigider pentru cel putin jumatate de ora.</p>

Dupa 30 min intinde ambele aluaturi (cu cat vei intinde mai subtire, vei obtine biscuiti mai mici. Eu intind aluatul de aprox 3 mm). Bate un albus spuma si unge aluatul maro.</p>

Aduna aluatul deschis la culoare cu ajutorul sucitorului si aseaza-l peste cel maro. Acum unge-l si pe acesta cu albus spuma. Apoi ruleaza-le ca un sul.</p>

Taie rondele de 1 cm grosime si aseaza-le in (tava tapetata cu hartie de copt) si da-le la cuptorul incins la 180-200 grade C. Dupa 12 min, soate-le si lasa-le sa se raceasca, se vor intari pe masura ce se vor raci.</p>

<p>1. Tapeteaza o forma rotunda cu fundul detasabil (de 28 cm) si unge marginile cu ulei vegetal. Zdrobeste biscuitii intr-un mixer de bucatarie sau manual intr-o punga cu ajutorul sucitorului. Amesteca untul cu biscuitii zdrobiti si cacaua. Amestecul trebuie sa fie sfarmicios.</p>

<p>2. Toarna amestecul de biscuiti si unt in tava si indeasa bine aluatul pentru a forma o baza pentru umplutura. Poti face asta cu mainile umezite sau cu o lingura.</p>

<p>3. Intr-un bol mic pune 150 ml apa rece si presara un plic de gelatina deasupra, lasa sa stea asa 10 minute. Apoi pune bolul deasupra unei oale cu apa care fierbe, amestecand continuu pana cand cristalele de gelatina s-au topit. Ia de pe foc si lasa la racit.</p>

<p>4. Topeste ciocolata folosind aceeasi tehnica, intr-un bol deasupra unei oale in care fierbe apa.</p>
<p>5. Bate branza, galbenusurile si zaharul cu mixerul pana se omogenizeaza bine. Apoi adauga in jet subtire gelatina care s-a racit (daca gelatina e fierbinte umplutura s-ar putea sa formeze cocoloase) si apoi ciocolata racita.</p>

<p>6. Bate frisca tare si adauga la aluatul de branza mai intai o lingura, amesteca bine apoi amestecand cu grija restul de frisca. Bate albusurile tare si procedeaza la fel.</p>

<p>7. Toarna umplutura peste baza de biscuiti, uniformizeaza acopera cu folie transparenta si da la frigider peste noapte sau cel putin 3-4 ore inainte de a servi.</p>

<p>300 gr. zahar pudra</p>
<p>4 albusuri</p>
<p>colorant alimentar (optional)</p>
<p>gem de capsuni</p>
<p>250 gr. mascarpone</p>

<p><strong>Cum procedezi:</strong></p>
<p>1. Bate albusurile pana cand incepe sa formeze &#8216;varfuri&#8217;.</p>

<p>2. Adauga zaharul cate o lingura odata batand cu mixerul.</p>

Daca ai optat pentru colorantul alimentar, adauga-l.</p>

Pe tava acoperita cu hartie de copt, pune cate o lingura de bezea. Lasa-le 10 minute sa stea, vor forma o usoara pojghita.</p>

Incalzeste cuptorul la 170 grade C. Da tava la cuptor. Lasa usa cuptorului intredeschisa si coace pentru 20-25 minute. Stinge focul si lasa-le sa se raceasca treptat in cuptor, astfel nu ti se vor crapa.</p>
<p>6. Lipeste-le cate doua cu gem de capsuni si mascarpone.</p>
